The way it is layed out in the video is for a loop end serving, you serve one end between the two posts release tension and spin the whole string around and serve other loop end. Everything is explained in the making a string video that is included with every purchase, but the main benefit of doing it this way is to be able to serve the end loop under tension.

Really cool ides incorporated into that.

How to you serve the single post end? Is it only tag end serving by the way you have it laid out?
