Broccolis cabbage now 3.70 Carrots the same Rice is 1.80 now Lentils is 1 dollar Diced Pineapple is 3.70 Cereal is 4 dollars Pasta is the same Interesting to see what’s changed (in a year +)and in the same haha. I was looking to see how other frugal shoppers were doing

Hi Nikki. Thank you for all your great content. It’s great to see a fellow Aussie. I make my own yoghurt. I use 1/3 cup of coconut yoghurt, 1 litre of bonsoy soy milk. Then into the easiyo yoghurt maker overnight. It’s usually perfect. If it’s a little runny I thicken it with some protein powder. Instant pudding.

Great video series! Thank you. I did wonder about the fact that you probably ended up cooking more food in the ‘Mary’s mini’ style due to the fact that your family members were probably eating it too as it looked interesting & yummy food & meant they didn’t have to cook for themselves. A comment on that & how you felt about that would be great. I also wondered if you enjoyed the cocoa sweet potato pudding you made & if you would make it again not during such a challenge. Thanks

Potato bites - yum. I have not made them for a few years. I used to add some mustard and cheese. It does work with vegan cheese but they are not as cheese stringy. I cook mine in the griller. I flatten mine a little to heat through a little quicker.

Hi Nikki, I follow a YT couple from St Louis (Krocks in the Kitchen) who ate a potato diet for a month. They did this to kick start their now successful weight loss journey. What's my favourite potato recipe? Bramborak, which is Czech potato pie.

Hi Nikki it looks really great. I know what you mean about the chocolate fix. I am on my way. I’ve been two nights in the van and I’m going for a quilting sewing retreat patchwork it Bribie Island. Potatoes actually have a surprising amount of protein. I'm on day 4 now & I've been impressed with how full I feel after each meal, and I haven't been snacking in between!

There is protein in every vegetable. I did the Mary Mini's in 2022 and after 2 days had no more cravings (I ate sugar and process foods daily) Lots 9 lbs which some was water weight but it was still a quick start. I didn't eat processed sugar (chocolates, chips, swwets) for 14 months. No meat and dairy and lost 56lbs.

TBH, I'm not exactly sure what the parameters of his diet was, but I personally am not a fan of any extreme mono diets (like eating only potatoes, or only beef, etc) for long periods of time.

Oh my goodness, I keep my open tofu in the fridge for up to a week. I just change the water each day, I haven't got food poisoning yet.😂

😆 Yeah, tbh mine stays in longer than the recommended time too 🤫 But the packet says 3-5 days, so .... best to play it safe giving advice in a video!

I'm sorry to hear you've been in hospital, but I hope you are on the mend now & doing well ❤️ I really like recipe ideas that work with a variety of different ingredients... that way if I can't get something I can just swap to something else. It doesn't always work, but more often than not it does (otherwise there's always 2 minute noodles! 😂) Take care 🌼🌸🌷

I'm doing a pantry challenge now. I'm only allowed to go to the store if I run out of Tea, plant milk for my tea or gluten free bread. So far for May I've spent $22.86 USD! (I've tried making my own it's expensive, tastes horrible and completely wrecks my Campervan where my walking around area is literally the size of a yogamat, yay to 78sqft living space😂)

I'm so happy I found your channel today! Your channel combines 3 of my passions. I'm transitioning back to WFPB, I too live in a Campervan and I live a frugal debt free life. I had never heard of an Ecopot thermal cooker before. It certainly would solve the problem I have with having to babysit a pot of beans on the stove!

Welcome! So glad to have you here 😁 Thermal cookers are a game changer! (I've been told you can even make one youself with a Styrofoam box (or an eski / chilly bin), your cooking pot & a bunch of towels to wrap the pot in before putting in the box. Basically you just want to trap the heat 👌) EcoPot is the brand I have, but there are a bunch of different ones if you search online. I like that I can cook my beans overnight & not have to do much!

I do find the prices in Exmouth really quite reasonable, considering how remote the town is. If you do get the opportunity to visit, the snorkelling is amazing! Such a wonderful experience ❤️

Vibe Church (Gold coast) has a few supermarkets selling very cheap food from various suppliers. If you do a small grocery shop you get bread and whatever veggies they receive that day for free. I spent $30 on basics then got my potatoes, bread, sweet potatoes, corn and apples for free. If you're doing it hard this is a wonderful service.

I'm making the green pasta using brocolli, zucchini, marked down fresh pasta sauce and baby spinach. Love the tips and tricks it's helping both with my food budget, waste, and not overstocking stuff. Also we are jealous of the beautiful WA weather it's wet and miserable in Sydney. Thanks Jody Kerr.

I would make lentil patties or lentil tacos. ( my family love them.) I’d also use up the tofu and make either a sweet and sour tofu, using up the pineapple. Or I would make a lemon pepper tofu, which uses up the tofu and some of the lemons both are served over rice with or without added vegetables.

Fried rice with a side of the spicy stir fry with pineapple would be a great use it. So many things go in. Beans and rice, black bean burgers and black bean tacos. Sounds like you have lots of great ideas.

@@Sonja... first rise: at least 2hrs or until doubled in size (can be left to rise overnight). 2nd rise (in loaf pan): at least 30mins or until doubled in size. Bake at 230*C for 45 mins

As a vegetarian I really loved these ideas for dinners! We travelled Australia for 3.5 months in a camper trailer in 2016 so I can totally relate to the small supermarkets/what they will have stocked/how much it will cost! I'm a bit jealous 😂 wish we were travelling again!

An idea would be to take the tofu and make a fancy saucy bake with your various sauces and alternate it with the tempeh for lunch in the Buddha bowls. Or simply make up a peanut satay sauce for it. That way you won't get bored. Another idea is a corn bread for a side. You've got polenta and flour, mix with the creamed corn etc. Sweet or savory. Freeze any leftovers and eat with your beans. There is always room for cornbread!

I've just tried the baked oatmeal... I have to say, I reckon I'll be drizzling dune honey over this before I eat it... I've used an off-brand of peach halves in light syrup and honestly, I'm not sure how they define syrup because it wasn't sweet and the peaches really didn't taste peachy?

I wonder what they use to make 'light syrup'? I must admit, while I haven't had any problems with tinned peaches, the tinned pears of late have been powdery & tasteless (which is disappointing). Honey would be delightful with this, as would a good dollop of yogurt (if you have it).

You could definitely swap out the passata for tomato paste in this meal plan, if you wanted to. I didn't specifically go shopping for this video, instead I got creative with items I already had on hand & tried to use the same ingredients in multiple different ways. I do have an open jar of tomato paste in my fridge, but I chose to use the unopened passata instead.

My husband also doesn't like zucchini, so I've also made chocolate zucchini loaf. I grow pumpkins but we either have none or a glut. One year when we had a glut, I found a recipe for pumpkin gingernut biscuits. They were good. I have also made a pumpkin and chilli bread, which mum loved.
