now with the cams remember tension is important for them to work properly, you should make sure they are seated correctly. these early models vary on stitch quality too. can you give me an idea on what can and what is doing?

Your videos really helped me so much! Still some confusion on the stitch expander knob - what do put it on when you're not using a cam? What do the arrows mean? Can I make a wider zig zag than I get with the 4 setting? Thank you so much! There are video reviews of this ma Hine but none like your that break down every feature in great detail. Ok, as far as the zigzag number 4 that's the largest size you can get on the machine. The stitch expander only widens the length not the width of the side to side portion of the zigzag. I'll do a short video to explain better.@@sonopoly

Do you have the book? If not, I will do a video on oiling the machine. If you don't use your machine a lot it needs to be oiled before use. Many problems with the machine can be fixed by just oiling it. Look in a couple days, I'll do that video. What seems to be the problem with your machine?

No, not in the broth. In each of the quart mason jars I put 1 teaspoon of salt. Then I pressure can the jars. See my chicken broth video for the canning portion. All home made broth must be either put into the freezer and stored there or it MUST be pressure canned with a teaspoon of salt in each jar. I can keep the pressure canned broth for up to a year on my pantry shelf. Using the freezer method one month. Thank you for watching and keep on watching

Technically A stock is made with mostly bones and will contain a high amount of gelatin, Be thick, Have a bit of a mineral taste to it, Usually simmers many, many hours usually in the teens of hours and usually not filtered. Great for noodle and rice dishes and poor for sauces and clear soups. A broth is mostly flesh pieces simmered and hour to 3-ish and usually filtered and possibly cleared with egg whites and great for sauces and soups. Vegetables don't make a difference. Reality most of us don't work in a 5 star restaurant and use the terms interchangeably :)

Dont forget to sear the meat (cuts) if you make a stock but other then that you are definitely on the money. A good stock takes about 24 h of cooking or two whole workdays. If you use eggwhites to clearify your stock (or broth) you should let the liquid cool off before adding the whites and bring it to simmer while stirring slowly until they float and can be skimmed off.

When I'm making my broth not stock, it also contains vegetables. I did kinda interchange the words when I was talking. I apologize. However, a true stock, whether it's chicken or beef (or other meat) is strictly made from bones. A broth is made with vegetables, meat, and bones. And yes it's not clear. This can be made at home easily. These are good points of conversation for other viewer. Thank you for your input.

I'll use it in other recipes. Usually I'll make broth when I want to make a beef dish the next day. I'll can the broth and use the meat in that dish. I made beef stew with the meat you saw. I reserved some of the broth for the stew, I just didn't show it.

I have loved Kenmore machines for over 50 years; with few exceptions, they are all superb. At least until Sears had to give in to the bottom line and using plastics (planned obsolescence). I've used double needles with them too and like the result. I've never seen a tutorial on how to thread a double needle and was surprised to know that you thread both at the same time. I was taught to thread mine separately. I've also never seen them threaded through the tensioner differently. This is NOT a criticism! I just find it highly interesting. I've have always had success with doubles as well. Perhaps different machines handle them differently. It really doesn't matter however, as long as it works! The end result is what counts. I was surprised to know that you were managing the camera with one hand - this was nicely filmed, easy to see and follow what you described. And the audio was excellent as well. Thank you for teaching me something new.
