Just a suggestion Mister Bulbul, after you boiled the pork meat in hot water with aromatics like lemongrass, bayleaf and some black pepper, set it aside first at a cooling rack then, prick the skin all over with fork, when it has cooled down a bit, only then do you fry it. Pricking the skin and cooling it down after you boil it is necessary to achieve a thin, crispy skin, not a hard cracker-like skin. Once the oil is really hot, you can fry the boiled pork meat in medium high to medium heat. Also, in order to avoid hot oil splattering when frying, put a lid on the frying pan to avoid getting hot oil splatters on your hand and face. I have to say though, you really are strong. I am already drunk after i drink 2 cups of emperador. 😂😂😂

You don't need to use all the Sinigang powder if you prefer cooking by "feeling", you can put the powder, mix, and taste according to your preference of sourness, But we like it really sour and yes Sinigang is best eaten, mixed in rice with Pork belly or Milkfish.

Tomato and eggplant actually add up sourness into Sinigang when mix with tamarind powdermix makes the sinigang unique in taste.. Next time add Okra and mustard leaves I bet you, you will remember me.😂😂😂
