Omg, your chocolate granola recipe is awesome!! It tastes like Cocoa Krispies!! I used date syrup, vanilla powder, upped the oatmeal instead of protein powder, and swapped a mix of cashews, sunflower seeds and pepitas for the walnuts. I’ve already snacked on HALF of the batch already. It may never make it off the cookie sheet! I have been making another granola recipe of yours from last year (?) that’s my weekly go to but definitely going to try your other recipe too bc you know how to make granola that is amazing!!!

I made the kale and white bean salad and chopped up the kale well and massaged it with the dressing for several minutes, but it wouldn’t stay on the fork and was very hard to chew. I’m thinking about cooking the leftovers. The taste was delicious though. Any suggestions?

Ahh I’m sorry to hear! Maybe more oil to help the kale soften up? I think it also depends on how fresh the kale is, if it’s more mature it will be tougher

Loved those recipes, and I realise I’ve been craving some butter beans over the last couple of days, so I’ll get some of my home cooked ones from my freezer, and use some home-dried tomatoes (a gift from my sister!) I'm curious why you don't like virgin coconut oil. I understand about refined coconut oil for sure, but I'm wondering why you don't like to eat virgin coconut oil. I thought the health benefits of unrefined coconut oil far outweighed the negatives. I know you've completed nutrition certifications, so it would be great to hear your thoughts.

Too high in saturated fat for me to use in everyday use! My cholesterol gets high even when I’m trying to eat super healthy. They say even saturated fat from plant sources can raise cholesterol. Just one tablespoon has 12 grams saturated fat which is almost your whole days limit. I will use it in special occasions like when trying to make a special dessert or cake but I don’t use it everyday. Everyone is different though!

@@Chantymarie Interesting! Thank you! I have long been unsure about MCTs in coconut oil for fat burning, but that's true that everyone is different and I think it's definitely not for everyday use. Also, I know the research on blood cholesterol levels is up for debate/controversial, so that makes sense. Thanks again for sharing your thoughts!

It’s not new, opened over 50 years ago. Does sell quality stuff, just not affordable for most of us. I’ve lived in Santa Monica for the last 40 years, only been twice. Been doing fine without it. It’s great for those who can, an enjoy spending there money there.
