this would be raw pasta ? if penne takes 10 to 12 mins to cook al dente then cooking for just 5 and leaving in fridge only to heat for 30 seconds is not nearly enough time in water ….

I love this idea! I do not own a restaurant but I have a relative large and hungry family. Having the pasta always ready in the fridge comes handy. I have a question though. Is there a minimum time to let the Pasta wait until cooking it for the second time for only 30 seconds? I give an extreme example: I cook the pasta for the half time it is adviced. I set it aside and somebody wants (say half an hour) later to use it to make say putanesca. did the pasta have time to become al dente?

Fantastic to hear about this research. If we can get food to last longer on the shelf it would be amazing. Halloysite Nanotubes (HNTs) sound like an amazing, relatively cheap material that has all sorts of fantastic properties
