There's just something about that "infinity pool" aspect of the overflowing sake cup that's very satisfying to watch. Or maybe it's just the knowledge of the "bonus" sake at the bottom of the container 😅

I loved all the different techniques used to elevate the food at just the right angles to evenly char every side of the fish. They aren't shaped like boxes, after all, so why should we cook them only at one angle like they are?

The type of wood used to make the charcoal. Binchotan tends to be very dense and long burning with very little fly ash. It's just a very clean and unique flavor. Different wood for different meals. It just wouldn't taste the same as, say, mesquite wood charcoal.

No, that's actually just salt (perhaps smoked salt). The binchotan itself produces very little fly ash.

Reminds me of when I took the train from Tokyo to nearby Wako. There was very little time for lunch, so I just went to a small tempura joint next to the station. Normally, where I lived in France, you would NEVER eat so close to a train station - food poisoning guaranteed! This place was tiny, just a counter and an older man with a vat of hot oil. My Japanese colleague ordered, and we were served some of the best food I have ever eaten. Japan is like that.

Very nice video it showed mostly everything in my how to make sushi 🍣 book that I read last night everything except for the actual sushi lol but it showed the sashimi 🍣 the Japanese rice wine that dipping sauce that I believe starts with a p the wasbi sauce I believe they had some of my favorite picked ginger shavings yeah that's some true Japanese cuisine there I'd love to try it some time if I could atleast get ahold of some fresh Atlantic fish 🐟 I'd make sashimi out of that I know it's not genuine fresh Japanese sea food but it's good anuff
