I am glad you are enjoying the food, but I would call this meal a fusion restaurant. True Tex-Mex is a bit different. As stated by our friend from Gonzales, the small mom-pop joints with the enchiladas, tamales, tacos, with a side of rice and beans is true Tex-Mex.

If you are willing to wander to Edison, NJ, "Harold's New York" deli makes a pretty amazing Corn beef sandwich. I would definitely recommend you give them a try. They are AMAZING!

A very white gravy is usually a canned commercial product. Chefman's brand (Nestle's Corp.) One gallon (4qt) can. Libby's Sausage Gravy is available in Grocery Stores that carry the brand. Both need Sage & Poultry Seasoning added to them in my opinion. My local Gas Station serves the Chefman's Sausage Gravy & 2 biscuits for $2.38 including sales tax.

New Orleans has tourist food. You need to go to real Cajun country around Lafayette or lake Charles for real Cajun food. Having said that, the gumbo was much too watery. The beans and rice look okay, and you can dip the cornbread into that, or put butter on it.

I'm from Ohio and Detroit Pizza is where it's at. Chicago style looks absolutely amazing. And I've tried to like it, but it absolutely sucks really and New York Style it's pretty good but weak, That's for Sissy's.😂

I just watched your video from Mr. Beef and I cannot agree more that the dipped beef is the best. Chicago dogs I change the sweet relish for dill and get extra celery salt on them. So good!

I've had beef sandwiches (where available) from all over the nation. Philadelphia does well with its beef and cheese, but Chicago dipped Italian beef w/hot peppers is unmatched. Literal perfection

You are right on about the queso being similar to a bechamel. That's how you make a good cheese dip that remains a melty texture. Add to this lots of cheese and peppers... another way it's often made is velveeta and rotel (canned tomatoes and peppers)... the latter works great in a crockpot for a party. The thick tortillas mean they're handmade. I love them like that. Classically, Tex-Mex is a bit more Americanized than those tacos. Think Taco Bell. Ground beef tacos in a crispy shell, burritos, enchiladas with a red sauce OR chili on top. Sides of mexican rice and refried beans.

Krispy Kreme doesn't have crullers or nutties, which while not the best are pretty respectable at Dunkin. So which I'll go to depends what donuts I'm looking for on that day. Also, dunking. Krispy Kremes are rubbish for dunking. Can't beat a nutty donut with hot cocoa for dunking.

You two REALLY need to try real maple syrup, ideally various grades, and ideally side by side with crap syrup like Log Cabin, Aunt Jemima, or other American atrocities. Maybe visit one of the northern states or Canada to check out maple syrup production? The only downside is that you'll know what you're missing when you go to a restaurant that serves the fake stuff. Also, one of the best lower-priced places to eat in Vegas is at Taquerias.
