For non-diatonic chords, how do you what quality(major,dim,dom etc.) to play them as? Is it a genre or song specific thing or are there common tropes such as a major b7, no matter what the context

Thanks for this. Why does the 4&5 work with the 2&6 in theory. If I want to add the 3 minor, how do I find out which major triad would work?

The 4 and 2 are the same chords just different root notes. Think of them as 1st cousins. Playing the 5 over the 6 gives these lush extensions very in the world of RnB If you want to play the 3 minor, you could play the 5 major triad
