We are sorry your zucchini turned soggy. If this happened, it could be due to overcrowding the pan, high water content, or a low oven temperature. Try spreading the zucchini out and salting them for a few minutes to drain excess water before seasoning and roasting. We didn't use this salting process in this recipe, but it may help if the zucchini has a lot of water. After seasoning, spread the pieces out and roast at a high temperature as mentioned in the recipe for better results! Hope this helps!

Traditionally, barley tea is enjoyed without any sweetness. But if you like it sweet, go ahead and add some, even though I recommend honey over sugar to keep it healthy.

I would drink barley tea unsweetened, pairing it with a fruit (banana, mango types). If you decide to eat something more 'sugary'. This pairs really well with sweet dessert. The toasty, wheat/earthy flavours helps essentially 'clean' your tongue of the sugary flavours. So that when you go in for another bite, it feel likes you're having the spoonful of goodness for the first time again.
