Deer meat fat is really waxy and is not overly tasty...its best to trim off as much as possible

You need to learn to cut the meat in a way that cleaner than what you have here. That silver skin absolutely ruins the flavor. Processing is key to venison

Who washes venison? They let it hang fir a couple days before they start skinning it to drain all the blood.. You're taking the flavor out of your meat!
