When I fillet rig there is a thin line of gristle left down the middle of the fillet. Is this normal and does it need to be removed? I have referred lots of people to this excellent video and am eager to try out your knife and sharpening guide

Thanks Jay, just check the roll on your edge when filleting, it may just be a bit bitey on one side. Drag your thumb over either side of your edge, if you feel a burr on one side, give it a lite rub on that side with a steel to centre. Or Andre your knife on a 45 degree angle when coming towards or away from you, this will reduce the bite and cutting into the bone. It’s only cartilage but it’s the presentation that most people think about like blood spots, skin, bone etc, personal preference. Thanks for the support, contact me if you want to know more.

Hi, you said that it only has the spine as the bone, as the rib cage is made of cartilage does that turn soft when cooked? I finally caught my first rig at diamond Harbour at Littleton NZ last night and am going to put your tutorial to good use!!! Thanks!!!

Drowning it in fresh water is criminal, fillets should never touch water, salt or fresh.

Hi Harold, generally a deep skin will get most of the blood off the top, with a little bit of trim. It’s still edible, just presentation wise it’ll turn brown when it’s cooked.

Always keen to see new ways, send me your video. Regarding getting guts on this, not bothered, I eat pork belly and smoke my own salmon fillets, the belly is the best, which has had guts on it, don't be to bothered by it, especially if you cook your fish.

Great video great camera angles and description is by far the best have seen it has been a while since I have had to fillet a lemon some and after watching a lot of others this is most definately the best 2 thumbs up for me fish is best served the bone anyway flavour and meat is on the bone so should always be aye on the bone inner caveman love meat on bone
