He's Right! HI is known for their Saimin/Ramin. The shiro [soup] is what makes each saimin restaurant different. When taking out,to eat at home or a later time. Have the noodles and soup in separate containers. You can microwave or heat ,not too long, and add it to the noodles. And yes,again. The Shiro is not the same the next day.

10:34 Russian borsch indeed needs to be rested. I don't know why, but it's aromatics become so much prominent after about 1 hour of sitting there with closed lid. Not an expert, just your average home cook.

@라면스프는 고추장 멸치볶음을 넣어보세요. 라면스프와 아주 비슷한 맛이 납니다. 파와 고추가루도 넣으면 비슷할거 같음. 라면사리는 면을 뽑아 수증기로 쪄낸뒤, 말리고, 기름에 튀기는 방법. Try adding (Stir-fried Dried Anchovies in Red Chili Paste)of korean food, to ramen soup. It tastes very similar to instant ramen soup. I think it would be similar if you also added green onions and red pepper powder. Ramen Sari is a method of pulling noodles, steaming them, and dryed, and then frying them in oil. 고추장과 참기름(볶아진 식용유, 정도)과 몇마리의 마른 멸치를 넣어도, 한국의 라면스프와 비슷한 맛이 될거라고 생각합니다. If you add red pepper paste and sesame oil (fried cooking oil, degree), and a few dried anchovies, I think it will taste similar to Korean ramen soup.

I figured it out, I hadn't understood but you bake 100 grams of baking soda and then only use 5 grams for the recipe. The rest is for another day/recipe.

When you heat the Baking Soda to create Sodium Carbonate it is unclear... do you only add the original 100 gram pre-weigh which would have reduce by ⅔ or 66 grams OR 100 grams AFTER baking weight, meaning 100 grams of Sodium Carbonate (the after baking product)?

I loved everything about this video and I thank you for sharing your journey with us (as well as the video clips with Takerou Kanda). The most impactful part for me was near the end, approx 7:06. It was profound and resonated within. my 66 yr old journey. Maybe that's part of why we come to youTube. Or, at the very least, why i came here wanting to learn how to sew set-in sleeves, fell down the rabbit hole and ended up learning about a man whose curiosity drives him to greatness in fulfilling his goals and his own measure of success. Regardless, thank you for taking the time to share with us.

If you have this along with other veggies and stuff you'll be fine even sodium is important for the body you could use stuff with low sodium too

Tsukemen (dipping noodles) invented by Mr. Yamagishi are not simply noodles and soup served separately. The noodles are boiled and then cooled in water to maximize their firmness. As one proceeds to eat the hot soup and cold noodles, the temperature of the soup drops. When the temperature is high, the soup has a strong salty taste, but as the temperature drops, it changes to a broth with a strong broth and sour taste. It is designed to enjoy the change in taste.

Tip for making a Tantanmen with lighter color: Heat you soup in a pot, then get another smaller pot and put your sesame paste in a different pot (Way Of Ramen said he needed to put much more sesame paste and he definitely needed more). Once the soup reaches boil, put it in the pot with the sesame paste and use an immersion blender to blend the soup and sesame paste, this makes the sesame paste's taste more evenly spread and gives the soup mouthfeel by thickening it while making it more lighter in color.

Poking that hole in the eggshell releases the air inside. Eggshell thickness varies from region to region and a thin eggshell may crack under the pressure while you boil the eggs. Releasing the air allows the eggshell to withstand greater pressure.
