Did this over the weekend. Only departure was I included capsicums, eggplant, zucchini and tinned puree tomatoes...OK, a lot of additions I admit but the fundamentals were the same. It was sensational. The recipe is super simple and vgery6 quick. Thanks, Chef, for this great recipe.

The first time I ever had swordfish was in Sicily and it was served with a very light tomato and white wine sauce. So good! Every time I attempt to cook it, it turns out dry and mealy or underdone. How thick were your filets? How long should each side be cooked?

If you want your ribs to be extra tender and juicey. Follow Heines's video with the spices and cook the ribs at 275 degrees in the oven for 2hrs 30 mins or 3 hrs.*optional to grill it like Heines did in his video* Then before adding the garnishes, broil ribs in the oven for 1 - 2 mins with the sauce of your choice or what Heines suggested in his video. Then take out the ribs and add the garnishes and enjoy.
