I just came across your channel as I was preparing to cook some cat fish.. your tutorial took me in a different direction..I love cooking so I had all the ingredients on hand and I decided to cook my catfish your way.. plus I had my bottle of Chardonay chillin as I started the process. Babeee!! Let me tell you I followed your instructions to a tee and my catfish came out the BEST Ive ever made it, while drinking my glass of white wine..2 glasses filled to the rim to be exact!! I used Paul Prudhomme's spice mix, but cooked it just like you said - lemon first, fry pan 4 then 3 minutes, then in the oven for 2. Cooked perfectly and fast. Thanks for the your excellent directions. My new go-to recipe.

Beautiful! I cook a lot of fish I do both breaded like this recipe and battered which people don't realize are two different things. When I do breaded fish I usually use the fish called striper which I catch down at Lake Texoma. And yes Old Bay is a wonderful seasoning for either a breaded or a battered fish. If you're feeling adventurous add a little simple French's yellow mustard to your liquid mix if you do that I would leave the lemon out though. In Louisiana is the best hot sauce for this I keep it in my fridge all the time. You did teach me some nice techniques

You must use refined peanut oil for a high smoking point, 443 °F. There are many other oils even better. See this Wikipedia page... en.wikipedia.org/wiki/Template%3ASmoke_point_of_cooking_oils?wprov=sfla1
