You answered my question about the egg white powder. I got clumps and didn't with a previous brand that had a added ingredient. I will let it sit and see what happens.

Sounds amazing! but I don't see me taking that many steps to make 2 at a time. Even supposedly owning 20 lil dishes & being able to vacuum pack them in 4 packs & sous vide 4 packs at a time... Still too fiddley for me. 🤪 That is a huge time commitment for all those steps. ouch! But I am happy to see You do it & that it tastes great! 🤩🎉 Thank You for all Your hard work as usual!! 😍

@@PinkLady54 yeah exactly, they did a first vacuum seal and rest to prevent something (I want to say sodium nitrate?) from remaining

NOTVEGAN f made with white sugar 😢
@Modernist_Pantry6 күн бұрын
Many vegans are fine with all white sugar. But if you are not then there are forms of it like beet sugar that make absolutely no use of animal products in either sugar or its processing.
@sunflower35725 күн бұрын
@@Modernist_Pantry thank you for your reply. I am only hoping to bring awareness. -“Granulated or white sugar comes from the stalks of sugarcane, which makes it vegetarian, but the mixing of this processed sugar with animal bone char to give a perfect white colour changes the entire game, which is why vegans around the world consider refined sugar to be a non-vegan food product.”
@Modernist_Pantry5 күн бұрын
Granulated or white sugar is also made from sugar beets which is never refined with animal bone also not all cane sugar is either. So don’t believe everything you read on the internet.

That's super neat! Could you do something similar with ground canned Spam and trasnglutaminase?
@Modernist_Pantry6 күн бұрын
No. Spam from a can is precooked. Transglutaminase would not work on it because the proteins are are denatured in the cooking process.

For a bread recipe that uses 450g of gluten-free flour, how much xantham would you recommend?
@Modernist_Pantry19 күн бұрын
start at 0.1%, but it really depends on each unique recipe, what else is in the recipe, are there any stabilizers etc etc.
@revonfernando547119 күн бұрын
@Modernist_Pantry , thanks for the response, no stabilisers etc. 3 types of flours, yeast, sugar, psyllium, salt

If one were to package gummies in Mylar small 3x3 sealed baggies, would these in anyway melt in the packaging or turn sticky from being inside the packagine or does the Carnauba 😂wax prevent that until 180F degrees is reached or above?
@Modernist_Pantry26 күн бұрын
If you seal them in Mylar the coating will help, but it will be important to get very dry gummies anyway.
