I am from India and developed my love for Neopolitan style pizza and after experimenting with few shapes at home I also came up with same idea of Oven. Now you have certified my ove, thanks man its all about air flow and 180°C

Yeah right, if you want to see "The Ultimate Seafood Tower", get yourself invited to any British Army Buffet or Dinner. They are stunning. They would have everything, from the Oysters to whole decorated Salmons and stuffed Trouts climbing up realistic waterfalls made from Gelatine or Agar. and....that's for one hundred, bit lean isn't it? 'Nuff said..!

When i used liquid nitrogen in the lab we had gloves and eyewear. You said you put it in the bowl at the top, but putting liquid nitrogen above head height, on a shonky tower, for public consumption, is irresponsible imo.

A company owned by a multimillion corporation (breville) will have done a risk assessment. When I worked in labs we also used ppe- but we were actively manipulating the n2. There are a few safety concerns with liquid n2 but in terms of contact, the important thing is it you don’t have prolonged (more than a few seconds) contact with it because it will cause cryoburns but you can actually dip your fingers (quickly) in it without injury. Similarly being splashed with it isn’t harmful (speaking from experience).

Appreciate the concern. There are many terrible things that can happen, but in my 20 plus years of using liquid nitrogen in labs, kitchens, fields, boats and even on places... we have been fortunate to have Zero accidents and only delcisous results. I can not say the same for hot fryer oil, knives and confection work:0

I tried many designs, clear causes some shooting issues for us. I first looked into making the entire tower from ice-but that is a lot of melted water and mess to manage later.

that's not a pizza. 1 you never use a rolling pin to open dough. do not know where you learned to do it that way , go to ITALY to larn to make it propperly .Bouna gornata e impara.
