I was cooking some casarecce pasta and decided to make meat balls to complement the fresh tomato sauce. It's all fresh and light as you can see healthy food can be delicious too ;)! For the meat balls I used parsley, nutmeg, salt, parmesan cheese and bread crumbles. For the sauce: fresh tomato juice, 1 chopped onion, 3 garlics, salt and 1 bay leaf. to storage I would advise to cook only the tomato juice for 20 minutes, than fill in the jar and cook it sealed for more 20 min. Jars that are outside of the freezer will keep for 12 months.
