How do u stop the patties from shrinking in the pan? Every time I make burgers they don’t stay flat and thin but instead shrink and become thick

I would say focus on smashing the edges of the burger as much as possible, ,so the edges can get really crispy which will in turn help set and keep the shape of the burger. Hope this helps👍🏿

Super important for those who haven’t made a wellie… after you sear The meat and brush with English mustard, you must wrap in Saran and refrigerate for 2-3 hours so the puff pastry doesn’t melt on the hot meat … I’m glad people are still Making this ole timey recipe … looked great.

If the steak is already cooked, you don't need to cook it again. Just throw it in with the pasta and let it cook with it. Let it cook with the pasta, not on it's own again.

Nah, since it's aged it decomposes around the edges but the inside is safe to eat and the aging gives it a richer flavor

I use some of the trimmings for dry aged burgers and melt down all of the fat to make beef tallow, which will give any steak you cook it in that dry aged taste.
