Mamma mia - the way he inhales the giuncale like crack cocaine and says " no butter! no oil!".... so genuinely funny and love the authenticity. He basically made a masterpiece with a handful of ingredients and a whole lot of love and pride.

I've made carbonara using guancale, pancetta and bacon and 😢think bacon is the best followed by pancetta and guancale all three are good but there's one ingredient that puts carbonara over the top prosciutto when I make carbonara I use a pound of meat to a pound of pasta so I 12 ounces of bacon or pancetta and guancale 1/4 of prosciutto I cook the bacon till its almost done and add the prosciutto once you try it with the prosciutto you'll always use it I just made carbonara using all four meats it was absolutely perfect and always use pecorino Romano and parmesan

Yeah, it's nice, but it's not the original sauce from Bologna, which forbids any kind of tomato sauce or purée. Would make Contaldo's sauce, though, to enrich my red tomato sauce recipe. The secret to making it insanely delicious is to use three big onions for it. It's a tip from the former husband, who was a great cook.
