#045 Chinese style stir fry with squid and green onions

【Ingredients/amount】
Rolled squid---500 g
A)ーーーーーーーーーーーー
Salt-----------------------a little
Sake----------------------1 tbsp
Potato starch--------1 tbsp

Ginger (sliced)--------1
Grated garlic-----------1
Vegetable oil-----------1 tbsp
Salt and pepper--------a little per each
Chicken stock powder---2 tsp
Green onions-----------1
Sake-------------------------2 tbsp
White sesame----------desired amount
【Cooking process】
①Make small cuts into the squid and slice it into thin rectangles, season it with A, boil it shortly strain it, remove moisture with a paper towel.
②Heat vegetable oil in a frying pan, put the squid from step ① in it, add garlic and ginger and fry them up, add salt, pepper, and chicken stock powder.
③Cut green onions into 7 - 8 cm pieces, combine them with the result from step ② and fry them all up. Add sake, decorate it on a plate, sprinkle white sesame.
【Tips】
・Seasoning the squid helps get rid of the smell, gives it a more mild taste and causes it to mix with seasonings better.
・Since squid can become rubbery if you fry or boil it too long, you need to cook it on a strong flame for a short time.
