Homemade fried rice is one of those cheap staples that every household in the world should know. It's fast, easy to make, relatively healthy, and well... it's rice and everyone loves rice come on now.

I think you guys are ignoring the fact that I condemned every other method of cooking rice that ISN'T in my Zojirushi rice cooker. But because this is but cheaper I gave other options because you ALWAYS complain about expensive equipment. IF I didn't give those other options then the top comments would be "OMIGOSH JOSH REEEEEE THIS IS BUT CHEAPER BUT YOU SPEND 100 DOLLARS ON A RICE COOKER???"

I made this tonight (first time). It was really easy to make, and seems to be a good base recipe you can play around with. It was too sweet for me, so, next time, I'll take away a 1/2 tbsp of sugar, and add some sriracha sauce. I'm really surprised how straight forward this is to make. I would say even a 12 year old (who has a little experience cutting vegetables/cooking with a pan) could make this. Edit: I made it again tonight. I forgot to reduce the sugar, but I did add an extra 2 inches of ginger, some squirts of sriracha sauce, and only used three cups of leftover, cooked rice. I also added some powdered garlic instead of grating it fresh. It came out better than restaurant-quality! I think fresh garlic would've been better, for obvious reasons, but tonight's was really good regardless.

Rice in a pot is the way to go! ! My personal favourite foolproof recipe would be: -wash your rice AT LEAST 3 times (the more the better), sometimes I even let it soak for 30 minutes or so -put a one to one ratio of rice and water in your pot and put it on the stove on a high temperature and give it a stir -when it starts to boil on the sides and the rice there starts to dance turn the heat down to the lowest, put a cloth on top of the pot and the on top of that put the lid (fold the cloth on the lid so that it doesn't burn) -cook it without ever opening the lid for 10 min that's it not more not less (unless you make a great amount of rice, you then cook it for 12 min) -once it s done take your pot of the heat and let it sit another 10-15 minutes! And tada! You got yourself some perfect non-rice cooker rice!

Wok Hey only works if you have extremely high heat with large flames that is able to heat the sides of the wok. The key to good fried rice is being able to evenly cook all the rice. Since most house kitchen can only produce small flames a pan is better. But now you have to cook with less amount of ingredients.

One of the most praised “forms” of fried rice in Cantonese cuisine is having the egg thrown in the pan where it coats every single grain of rice with an “egg fragrance”. Then seasons with soy and oyster sauce, and everything must be chopped the same size ie you’d never get strips of spring onion. But hey to each their own

Asian tip: Cooked rice keeps long in the freezer. We're talking 2-3 months depending on quality. If you want to portion out your meals, do so by cooking rice in bulk and portion them according to how much you eat in a single serving. Don't bother using tupperwear, wrap them tightly into a ball with a clingfilm. You can if you want but wrapping them saves more space. To reheat them, unwrap, serve on plate, and nuke them in the microwave in 1-2 minute intervals. It'll still come out like it was freshly cooked.
