I think Kris refuses to play the piano because they know the player is watching. Noelle says Kris would stop playing once they realized she was watching. So, it could be that Kris wants to play for Susie, but knows the player is watching them and so refuses.

the missing toriel in kris's room in the mansion is actually a result of the joke not translating properly. tutorial is チュートリアル (chuutoriaru) and two-toriel would be ツートリエル (tsuutorieru). it's close, but not close enough for the pun to work, which is why the joke is just チュートリエル (chuutorieru).

It's probably not that Kris has become a worse piano player. It's just that we can't make them play it properly. That's what frustrates them, since they'd have liked to impress Susie. Also, you got the info about the different party matchup in the middle of Chapter 1 wrong. It's not that the idea of Susie ditching Kris and Ralsei was a late addition. It's that there was originally going to be an alternate route for playing violently that would make Kris and Susie ditch Ralsei instead. There's even some unused content meant for it, though it was never fully implemented.
