So I'm here to tell you straight with my ten tips on cooking pasta perfectly...answering the hard questions like a small or a big pot? Parmigiano or Pecorino cheese? He is right, i cook a lot of pasta, and i learn it from my father (Isidoro or what my nonna always said Sidoro) and he always reminds me of the cooking time. How longer how better. He is in heaven now, but when i make his pasta, i am in heaven to. 🍝

You have a great father. My father always rushes me and tells me how amateur and horrible I am in the kitchen just because I cook food slowly and wait for the flavors.

2:58. Here the Italian rule always applies .... “The sauce waits for the pasta, NOT the pasta waits for the sauce !”

@M S Unfortunately this is a mistake that I, as an Italian, often see Germans make here in Germany (where I live). They cook the pasta and set it aside and then devote themselves to the sauce. Meanwhile the pasta sticks together and is not as good and nice as freshly cooked.

Absolutely agree with your last statement, "Please remember just how trivial this discussion is compared to the very pressing issues of the day". Step 11 don’t add oil to your water Step 12 you don’t need to keep stirring the pasta while it’s boiling Step 13 never break your spaghetti when putting it into the pan

@@wilduwu5987 if the water is boiling before you put the spaghetti in the pot it should be easy for you to put the spaghetti in and push it and twist it should soften enough quite quick for you to put it in but saying that breaking it is not the most important so don’t worry too much

I spent 10 minutes at the pasta section at my local grocery store comparing cooking times and colors of spaghetti😂 But in the end it was totally worth it. I enjoyed your rule number 10 so much, I am going to apply it to every meal now whether it is pasta or dessert Thank you so much for sharing the knowledge!👌

Pasta is very important, and I don't want to advertise or anything, but at least from where I'm at, LA Molisana, DeCeco, and Rumo, are the best pasta brands I can swear to. Barilla is found almost anywhere but ehh...

@@firstratecuntlapper4234 don't forget to pour some pasta water into the egg and cheese mixture because that really helps with the combining. When I did it before, it would mix well but it made scrambling more likely.

Sora.N Minakaze tempering the egg mixture with a ladleful of the hot liquid before combining is a also used in baking for making custards.

Just as a little tip for those who want to take it to the next level: Some pasta dishes appreciate if you break these rules just a little. For Cacio e Pepe, pasta alla Gricia or Pasta alla Limone and other sauces (Butter+Garlic, or Nduja and Onions) where the base of the sauce is for the most part an emulsion of pasta water and fat, I use considerably less water to cook, so the water gets extra starchy. For all of these "pasta water emulsion" sauces that also a lot of salty ingredients, like peccorino cheese, guanciale or pancetta, like cacio e pepe or alla gricia, I will use a lot less salt for the pasta water. All of these sauces, where the pasta water and fat emulsion is king, I also undercook the pasta in the pot for one or two minutes and finish it up in the pan for a bit longer, to get a better emulsion and to be able to thicken up the sauce better. For all other pasta dishes, where pasta water is not a major part of the sauce, but just an additive, I use plenty of water and make it "as salty as the sea", as explained. I've being making pasta all my life, and never put the pasta water. such a small thing that can make a lot of diference I'm actually amazed of how simple it is to make it so much better. Thank you Vicenzo, I'm watching all of your videos Hugs from Brazil

It depends on how you transfer the pasta, sometimes enough gets in anyway. I always set some aside if needed.

I recently made carbonara for the first time ever; I couldn't get any guanciale so I used pancetta instead, and I thought the sauce was the right consistency so I didn't add any pasta water and it worked well for me. It was so odd to not put garlic in a pasta dish since I love garlic but this may be the first thing I've ever made that I think garlic would've ruined.

OMG you are so right - I`ve been doing it wrong for years and around some 4-5 years i make Pasta like you instructed - Tastes waaayyyy better! Prior to that, i did all the bachelor mistakes you can imagine ( Oil in the water, cooking sauce at the end, draining pasta in cold water and letting it dry to a cold clump of starch...you name it).

I'm from Montenegro,live on the adriatic shore and we are big fans and have a tradition with italian/mediteranean food,particularly pasta.I love your channel because my grandma makes the pasta just the way you do it and I'm disgusted how the majority of restaurants make pasta(not in italy). Chef didn't mention the 2 most common mistakes people make when cooking pasta: 1. Adding olive oil to the boiling water, 2. Breaking long pasta in half before throwing them in the pot.

I see what I'm doing wrong in my cooking of pasta. I need to add the pasta to the sauce with some of the starchy water. I'll do this next time I make pasta, which will be soon because I love it! Maybe after making it Vincenzo's way my husband will like pasta better.

Mary Ellen Brennan one thing I suggest if you are using this method is also to reduce your preferred pasta cooking time by 1 minute as it will finish cooking in sauce and may become overcooked.

@@LemonMeIon Yes, top tip! The first bite or two of the finished dish may feel just a little too hard but the rest will be perfect as it continues to cook, as Lemon Sqeez indicated. Overcooked pasta is really disgusting. Ignore Gordon - follow Vincenzo!

I'm definitely going to start adding water from the pasta to the sauce. I didn't until I recently watched one of your other videos, and there is a difference. I can't describe it, but there is a difference!

Maybe you could do a followup for each of your traditional italian recipes... what *can* you add or change in a manner that adds a nice dimension to a dish, without 'going off the rails' like so many do...? e.g. cooking on a wood fire in hot wood smoke... or when should you use butter vs olive oil vs animal fat... etc...

What a great summary of cooking Pasta, thank you for this video Vincenzo! One little hint regarding cooking time. If you are living high above sea level, like I do, remember that your water is not boiling at 100°C, it is boiling on a significant lower temperature. In that case you have to cook your Pasta for longer as recommended on the box, find out your time kompensation for your altitude. I also strain my Pasta into the sink, and simply put a cup under the strainer, so I have always some pasta water at hand. Happy cooking...

Hello, I’m not Vincenzo but I wanted to tell you that usually we use the eggs whites from the carbonara to make meringues or a typical Italian biscuit called “brutti ma buoni”, translated is “ugly but tasty” and it’s true, they are so sweet you should try them! I hope I helped you. Have a good day

Thanks. I love your channel! You taught me how to appreciate and make great carbonara. I found guanciale in Canberra, and I'm addicted now. I'm always keen to choose better quality, but I like to know what the real differences are - can you explain why the better quality pasta is lighter coloured than the other, more orange coloured one, since they are both durum? Also, how does this difference show itself in the cooked result? Cheers 😁

I typically use a pot with a capacity of around 5-6 liters to cook pasta. It allows enough space for the pasta to cook evenly. Happy cooking! 🍝😊

Vincenzo is absolutely right. The other night I made my own simple tomato and basil sauce, and mixed the pasta with the sauce and it really was a difference from how I was eating pasta before (pouring the sauce over the pasta already plated). Even making your own sauce makes a difference. For years I bought premade sauces, but after making my own tomato and basil sauce I can't go back to storebought sauces. My next step is importing real parmeggiano or pecorino cheese. Cheers Vincenzo. Have a wonderful day.
