每提到粤式点心,人们很自然就会想到粤式早茶四大天王“虾饺,干蒸烧卖,叉烧包和蛋挞”。它们不仅颜值超高,味道也是让你一吃就不能忘怀。直到有一次不经意的抱着试试看的心态点了咸水角,才一下子被它带给我的味觉冲击惊艳到了。咸水角从它的外貌来看,一个小小橄榄球的外表,两头稍尖,中间胖嘟嘟, 实在没有什么高颜值,如果没有特别注意,一定会忽略掉它的存在;但是它带给你的味觉感受是奇妙的,外表松脆,内里软韧,馅料丰富且带有汁水,咀嚼以后不断呈现的甜味和咸味的交叠,让你吃完一个还是意犹未尽。周末有时间在家又做了一次,还改变了一下造型,做了几个鸡仔的样子,受到家人的欢迎,疫情期间没有机会出去吃广式点心,自己动手在家做一下,也是非常享受的。
材料:
馅料 (可以做26个的量):萝卜干25克,虾米20克,干香菇5个, 猪肉150克, 适量的酱油,蚝油,白胡椒粉,五香粉,姜末和葱末
粉皮 (13个的量): 糯米粉150克,糖25克,冷水130克,猪油(或者植物油)30克,澄粉45克,滚水60克
Material:
Filling: 25g perserved radish, 20g dried shrimp, 5 dried shiitake mushrooms, 150g pork,appropriate amount of soy sauce, oyster sauce, white pepper, five-spice powder, minced ginger and green onion
Wrapper: 150g glutinous rice flour, 25g sugar, 130g cold water, 30g lard (or vegetable oil), 45g wheat starch, 60g boiling water
