Jake is one of our apprentices. He takes his skill to the next level by producing a batch of candy of his own design. This is a first in a series of these so you can see how he progresses. This is about how one learns with hot sugar. The flavor is amazing.

The only thing I noticed that wasn't quite Yoga level was the final cutting. I bet it takes a long time to cultivate the perfect rhythm for that. But yeah, let's all give Jake a hand, this is probably my favorite design among many cool designs I've seen on the channel. Go Jake! Awesome work!

It don't look anything like a bird from New Zealand. It does however look like the kiwifruit. Which is the fruits proper name.

They call them a “journeyman” from the french word for a day, because journeymen in medieval trades had completed an apprenticeship and were skilled enough to charge for a day’s work/could work unsupervised (unlike an apprentice) but were not yet masters of their craft. Anyway this candy looks yum, and I’m loving the different fun camera work :)

Yeah, I also wanted to comment on that. Btw, I read it as "Knuckle rooster 3000" the first time and I just thought of a rooster biting the knuckles and comparison of the pain due to heat and due to a bite.

Wow, great job, Jake! Looks excellent for a first design if you ask me. And those technical camera shots are pretty nifty too, Greg! Also, “these are still too big to eat”; we actually eat hard candy rods like that here in the U.K.! They’re called sticks of rock and are sold most often at the beach. You guys probably already know all about that though! Think you’ll ever make some sticks of rock, maybe for summer 2021?

I visited the shop about a year ago, was the highlight of a road trip to see my folks. as i have said elsewhere, finding you are also a toy shop that focuses on jugglers, AND you have an amazing soda fountain, AND the most amazing shrimp and grits ever....it was just amazing. and with all this going on, (and only 3 staff we counted, with maybe one or two in the kitchen), it was remarkable how happy, engaged and enthusiastic your staff was. you must be great to work for. speaking of, as a long time watcher and orderer (my cap candy and cough drops are on the way!), i can't tell you how pleasurable it is to see new candymakers exploring their skills with your guidance, experience and equipment. you are truly keeping something alive. when i make that trip again, i will definitely drop in :)

@@labella9291 sadly no. I love candy so much and it always makes me so happy. But I just have had to many ups and downs where I never got to it but still want it. Sadly had to give up my job to take care of wife's grandfather with cancer. So I can't afford it atm. I hope you enjoy im trying to picture the flavors and texture now.

@@e_pffne4190 I understand that completely. I hope things take an uptick for you. I saved for a bit to get my order in. It's a combination late Christmas present and Mother's Day gift for myself. I have the sole care and custody of my 100% disabled little sister after the death of our mother a couple years ago, so I know how much being a caretaker can take on your mental health and well being. When you get a chance, please do something for yourself. You deserve it.

@@e_pffne4190 I understand that as well. I didn't go where I wanted to go to stay and help my mother when she was diagnosed, and now.. I'm kind of stuck where I am, and I don't really see any way out of it, to go where I wanted to be. Especially now that I have my sister to care for. By all means, vent away. And can I suggest looking into care taker groups on facebook? There are a lot of resources that can help you. Even if it's meeting up with someone local, who spells you off for a day for you to get some you time. I can't exactly do that with my sister, because she's non verbal and I have trust issues, lol.

You are going to live clay. I have been working with it for 18 years. Clayers are very helpful and usually willing to share any info that you need. Best wishes

My aunt used to make polymer clay jewelry, and my mind was blown when she first showed me how she made the beads. It really is super similar to the way they make hard candy!

I make polymer clay canes too! I heard in one video candy-makers got the idea of image from glass-makers. It's all art!

He is like 90% of the way there. If he adds a separator between the seeds he would be golden.

exactly what i was thinking. perhaps if he prepared a little less black and a bit more light green, he could use some of that light green as spacers for the seeds. thered be less seeds, of course, but thered be good separation, so he could create a little better of a kiwi design. still a great first draft from him though!

I love the attempt, for sure! If Jake wants to get the seeds to look more pronounced, he should layer the seeds in with the light green color. In an alternating pattern ( like the outer ring of candy canes are ) Not only will that space out the seeds, but he could create two or three rings like this to give it a really strong effect! Kiwis have this kind of like, starburst pattern to them where the light green flesh peeks around the seeds that I think he could do to make these really pop!

I love the new examples Greg uses to describe how the candy pulling process puts little bubbles in the candy in every video. One day it’s waves, or beer, or root beer.

As a person from New Zealand. I am known as a kiwi. We are named after our native bird the kiwi. The fruit however is named the kiwifruit. Not just kiwi.

We have the same distinction in the USA, but the kiwifruit name seems to have been shortened to kiwi in the last couple of decades. Maybe it's because we don't really have many true kiwis, so the term isn't very ambiguous.

Never heard it called a “kiwifruit” in Canada. Just a kiwi. Sounds funny, like melonfruit. Things sure are different in different places.

They call it 'Journeymen' because back in the olden days thay had to go on an actual several year long journey (referred to as "walz" or "wanderjahre" in German speaking countries, and a "ramble" in English speaking ones.) if they wanted to earn the title of master. They weren't allowed to come within a certain radius of their home town, weren't allowed to own any type of vehicle (be that wheeled or 4-legged), were supposed to get around on foot, or at least not spend any money on transportation, had to live off of their trade by exchanging their labor for food and lodging, had to have a clean record (to discourage the use of these journey years to run away from debt), had to wear a certain minimalistic attire, and could only carry as much luggage as could fit into a 30 by 30 inch cloth bundle. While rare these days, it's still done by a few individuals in a few trades, and these journeys are still officially recognized by trade guilds, though no longer necessary to go from journeyman to master.

the word "journey" is derived from journée, meaning "day" in French, as they were payed by the day. Journeyman years were a thing, but not a requirement as you're implying, many that finished apprenticeship simply chose employment in their hometown

I don't underestimate the powers these candy makers have, but I'm completely shocked and blown away at the fact that they can design candy like that. You explain from the beginning what you're doing and still, it always amazes me to see the final product!

That brown came out really good. I actually like the appearance of the little flecks from the caramel that reminds me of the kiwi hair. I'm excited to see his design change across iterations

This is amazing for his his first shot at the design! It must take months and months of practice to get timings down as well as the ability to visualise what the design will look like and actually make it happen! Well done Jake!

Excellent start to what promises to be a great candy - wish we had smellovision and tastovision; cause this sounds like a choice candy flavour (you see what I did there?) Jake's certainly got some skills. Not perfect yet, but room for developement allows us to come along for the ride till it gets to perfection. *rushes off to website to see if unicorn droppings are available* Nice one Jake. And well done PD for choosing to employ someone like him.
