Professional chef Palak Patel from The Institute of Culinary Education and home cook Lorenzo are swapping recipes and hitting the kitchen to make veggie burgers! We set Lorenzo up with a selection of the finest ingredients from chef Palak’s kitchen, along with her recipe for a $172 meatless burger. Meanwhile over with chef Palak, a relatively modest $14 worth of ingredients were being tweaked and augmented while elevating Lorenzo’s burg to gourmet status. I saw the ingredients that Lorenzo gave to the chef and thought that was the hardest challenge I'd ever seen. No bean of any kind, no protein, no herb or spice... This chef is AMAZING. It's all about textures and a big burst of concentrated flavor from each simple ingredient. Chef Kiss

No kidding. And, the only reason her burger was so expensive was because of the upfront costs of buying most of those ingredients that one would usually buy once and keep in their pantry.

TBF I don't think they remotely used up most of the ingredients for the $172 burgers, so if they'd had made 30 burgers or whatever it would have come in a lot cheaper per burger. Stuff like TVP and bulgur wheat which make up a large fraction of the burger are pretty cheap.

everyone says this every video and i have only seen maybe one or two videos in which they leave the brief. I'm honestly ok with them leaving the brief a little if they are adding things that most cooks should already have in their pantry

@@2ntwins They did it a lot early in this series, and a lot of them were adding stuff most people don't have in their pantry. I recall one adding saffron (the most expensive spice in the world), for example. The only thing the chef did in this one was smoke the mushrooms. Not everyone has a smoker, but its easy enough to get that flavor without one that its not a big deal.

Props to chef Palak for sticking to the brief despite such a paltry tray of ingredients, both burgers looked bomb. Definitely going to try confit tomatoes on my next burger

Interesting that even though Chef Palak had ingredients which were a lot simpler and cost a fraction of the price, her finished burger was a lot taller and seemed to have more stuff in it.

Worth noting that Lorenzo's original ingredient tray only had 4 portobello mushrooms on it and was priced accordingly; but Chef Palak's finished burgers had two mushrooms each, in addition to the mushrooms used to make the mushroom bacon. As far as height goes, I think those double mushrooms are really doing a lot to make the burgers tall.

A lot of the stuff she had in hers was to add depth, not volume. Each bite is probably packed with tons of flavor, considering all the different powders and things were in it.

Well, that's because the burgers she made had a lot of basically whole components in them (tomato slices, mushroom slices, mushroom bacon) whereas most of the ingredients she gave to lorenzo ended up getting blended or mixed into either a sauce or the patties, making them much denser which also means they had less volume.

Since it was a soy cheese and there were no eggs in that mayo, didn't Lorenzo technically make a vegan burger? Which is one step further then just a veggie burger, I'm amazed either way.

The sauce had Worcestershire sauce which afaik has anchovy in it. But an easy ingredient to remove and still have almost the same thing but vegan

It's interesting she used oil and ketchup. We actually use it here in the Philippines to glaze our barbecue while grilling and give it a nice color.

Just a tip to anyone who cares: Nutritional Yeast Flakes over popcorn is an amazing snack or cheese flavoring substitute! I’m not vegan or anything but I truly love it because the flavor is unrivaled! My aunt is vegan and introduced us to it years ago. Since then, I always keep some close by.

Here's a video idea!!! Have Rose react and comment to other people's home cook videos. A good one is by Ethan who did one recently about burgers. He shares from his home cook perspective, but curious to heard from a food scientist.

To anyone curious about Palak's burger but intimidated by the price, I have no idea why it's so high. Tvp and methyl cellulose really shouldn't cost a lot, I eat it often and let's just I'm not the richest man on earth. In fact, tvp + methyl cellulose and the refined coconut oil for the fat plus really any spice you'd actually put in it would not only be much much cheaper per kilo than both her burger and any plant based burger you can buy, but it's also cheaper than actual meat, like even really low quality ground chicken is more expensive to buy than this, at least where I live (It's also much higher in protein compared to meat for those curious, just be sure to season it 🥴)

"It doesn't taste like bacon!" it doesn't need to. As someone who loves a real bacon cheeseburger, I'd love to eat that. I bet it scratches the same itch and why would I want to limit myself to just bacon? Even as great as bacon is.

Well, I need to know how many servings her's yields before I feel this is an accurate price comparison. I'm assuming she's a restaurant chef and her patrons aren't paying $350 for a veggie burger.

most of the price that hers got was because of big packages that you would be able to use multiple times. definitely cheaper than it seems
