This recipe is definitely a new household favorite for us. We put this stuff on just about everything! Not only do the chives add flavor to your food, but the chive flavor is also infused in the oil, which adds to the profile.
Simply harvest your chives, wash them, dry them, and chip in fine slices. Layer them into a mason jar with salt (sugar optional). Heat some neutral flavored oil, like Avocado, or Sunflower, and pour it over the chives - but be CAREFUL, the grease will splatter when the moisture in the chives turns to steam. Let is cool, and place in your fridge. For long term storage, let it cool, and store in your freezer.

Dan is so cute! Its fun seeing her learn, but I think it is even better seeing her teach. Its so wonderful learning about her and her culture. And I dont think she could of asked for better host parents! You guys really let her flourish!

Its would be awesome to get more such recipes from her. She is adorable, she even calls you parents. I hope she get to stay a long time with you. She fits right in perfectly. She is so respectfull and well behaved. If more kids these days would be like her, I probably would have kept on teaching.

Just planted a bunch of garlic chives and started researching recipes. This wonderful video came up on my feed. I am wondering why she did not let the oil cook the chives inside the cooking pot. Pouring the hot oil directly into a cool jar could make the jar break. I would let the chives cook in the pot and then let the oil cool prior to pouring into glass jars. This looks like a wonderful recipe. Absolutely going to give this one a try. You two working and spending time together is absolutely adorable. Thank you for sharing this with all of us.

Hey guys! I made this today. I have about 3 areas in the garden, 3 separate chive patches. Sometimes I think they are not enough, and sometimes I think that they are WAY TOO MUCH OMG!!!!! Can you tell that right now it's way too much? I live in California, in the SF Bay Area, where winters are mild. Usually we get a freeze by January at the latest, but last year we did not get any freezes, and it has been so warm and so mild here this year (well, wildfires are not what I would call "mild", but you get my gist), that I would welcome a freeze (goodbye slugs and oxalis!) What this means though, is that my chive patches are out of control. Last night I watched this video, and so today I chopped them all down and made this recipe. Dan, you rock! Thank you so much! I have also been experimenting with baking sourdough bread, which means finding lots of uses for leftover starter (see www.zerowastechef, but I think you probably already do. The sourdough pancake recipe...) The chive oil on top of sourdough pancakes is the BOMB. I will try it on rice next, no worries, but I just thought I should let you know. I now have a gorgeous jar of Chive Oil. Not sure if I'm going to share it, ever. In the meantime, I will divide my chive plants. May the Goddess of Growth claim them as her own and expand their domains! Chive Oil, my new secret ingredient, thanks to Dan!

You could likely preserve the color (and flavor) significantly longer by adding a touch of Vitamin C after it cools off.

Dan, you are SO cute!! Thank you for showing us this recipe :) I have a question: if you don't have enough oil for cooking it in the jar at first, can you add more of either room temperature or hot oil?

Hi, I am Dan. Thanks for asking. If you don't have enough oil for cooking it in the jar at first, you can add more oil later but super hot oil only.

I'd like to say that I just did this, and used less oil than I thought I should, and it came out fine. The heat of the oil (and the salt) breaks down the chives, and wilts them enough to lower the level. I used less oil because I figured I could always add more later, but I didn't need to. I stirred it as it went in, and perhaps that helped. It was good to be economical with the oil. I think If I found that I really didn't have enough, I could probably put the glass jar into a pot of boiling water to help cook it from the outside. Personally I would prefer that to using lots of oil, so that the flavor of the oil in the jar would be very intense.
