1932 Yorkshire Spice Cake Recipe
Welcome Friends! Welcome to Sunday morning in our old cook book series. We're going to do yet another recipe out of this Five Roses Flour Cookbook, and this time around we're going to do something called a Yorkshire Spice Cake. It's in the Christmas cake section, and I have never come across this cake before, so I'm interested to find out how it works out. One of the interesting things about this Yorkshire spice cake is that it only has one spice in it, and that is nutmeg, so it'll be interesting to see what the flavour is with only one spice.
Ingredients:
3½ cups flour
4 tsp baking powder
½ tsp salt
¼ - 3/4 nutmeg grated
3 cups currants
1 cup raisins
¾ cup mixed chopped peel
¾ cup shortening (pure Lard)
1½ cup brown sugar
3 eggs
1 cup sweet milk
Method:
Preheat oven to 325ºF
Cream the lard until light and fluffy, then cream in the brown sugar.
In a bowl mix the currants, raisins and a couple tablespoons of the flour.
In another bowl mix together the dry ingredients; flour, salt, baking powder, nutmeg.
Mix the eggs into the creamed sugar and lard, one at a time.
Slowly alternate adding the flour mixture and the milk to the creamed lard, sugar and eggs.
Mix in the currants and raisins.
Scrape half the batter into a 9x9” pan lined with parchment.
Spread half the candied peel on top.
Spread the remainder of the batter in the pan and top with the remaining peel.
Bake for just over 1 hour or until a tester comes out clean - there is a real risk of over baking and ending up with a dry cake.

Was just about to comment that this looks to be what became Parkin, but then I got to the end of the video. Parkin is still something you can get regularly here in Yorkshire, it's usually darker and heavier with treacle and ginger and/or All Spice flavours to it. Near enough every region in the UK has at least one delicacy - hinnies, tansy, scones, oatcakes (Staffordshire), oatcakes (Scottish), pikelets, crumpets, welsh cakes, cider cakes, bara brith, battenberg, Dundee cake, fat rascals, hevva, rock cake, simnel, tea loaf, tea cakes, upside down cake, Bakewell Tart, Bakewell Pudding, Eccles Cakes, Manchester tart... I'm sure there's more that I'm forgetting.

Being from The Potteries originally, growing up for me it'd be N. Staffs oatcakes with cheese, bacon and brown sauce (HP sauce), Bakewell pudding with custard and a cup of tea... Ultimate comfort food

Parkin is a traditional northern English cake that you get in both Yorkshire & Lancashire, it's traditionally eaten in the winter months, especially on November the 5th (Bonfire night) in the North of England. It's a fairly dry/treacle/oat cake - it's not a spongy/gooey cake. *It needs to be eaten with a nice cup of tea.*

I was born in Yorkshire and spent 24 years before moving on. My mother was not into baking so I am not surprised that I did not hear of this. I now live in the US. I do miss English style fruit cakes. This sounds delicious. I will get my wife to make this. Dave.

WOW: we love spice cakes at home! Yours has enormous visual appeal. I am with you in thinking that this recipe is just about perfect. For my taste, I would leave out citron and maybe add in candied lemon zest and orange peel. Nutmeg CAN stand alone, especially when freshly grated. Butter or lard: I love best British beef suet available on the internet from Amazon, as one source. My mother mixed lard and butter: butter for lightness and lard for flavor. (That is how I learned it anyway.)"

How about a War Cake? They are perennial Maritime Fall favourite, notable because they don't contain milk, eggs, sugar, or butter - all austerity products during the WW's. My uncle makes the exemplar, baked in a Bundt pan and served plain with a slice of old Cheddar.

Excellent cake Glen! I remember this when I was a kid. My mom would use cinnamon, all spice with a rum sauce, similar to a bread pudding mix. 👍🤘♥️

Here in Australia we have "Light fruit cake" which is almost entirely this recipe. And then "Dark fruit cake" which is your more traditional christmas cake. I love light fruit cake, because you can totally just relax with a bit of liquid (tea, milk, but even a bit of water funnily enough), and devour a tonne of it, but Dark fruit cake has its more rich, heavily spiced overtones.

I remember my grandmother making this and this is why I hate raisins( esp golden sultanas🤮) and dried peel but I am in the mood though to make a pumpkin spice loaf for my teens on this rainy Ontario Sunday 💕Love these Sunday videos

That turned out really well, looks very similar to my nana's chirstmas cakes. I can't wait to see what you think of yorkshire parkin its one of my favourite cakes and we usually only eat it on or near bonfire night so its a rare treat.

If the cake seems dry I suggest soaking the fruit in water or syrup before hand, you could alternately boil them in water. Because of osmosis the dry fruit tends to absorb lots of moisture from the cake batter leaving it dryer than one would want. Soaking/boiling them will rehydrate lessening the effect of osmosis

This is a 'pro' tip! I come in on the side of soaking in a clear sugar syrup. Boiling has not produced the texture in the 'boiled' fruit that I was looking for.

Another great recipe. Ive had a quick search and couldn't find it on your channel, so I'd like to suggest you try a Lardy cake! It's a great English bread-like cake with a delicious sugary crust and sticky toffee soaked base caused by the sugar and lard melting through as it cooks

Looks great Glen! Definitely make the Parkin, as its amazing, but my recommendation would be to leave it in a cake tin for a few days to deliquesce, as it hugely improves the taste & mouth feel!

This looks great!! I have a recipe, from a friend who actually lives in Yorkshire, for a tea cake that is wonderful. I was always under the impression that a tea cake was just a cake you ate with tea. But this cake you soak the raisins, sultanas, and currants in brewed black tea and you add the tea to the batter. His wife sent me some and it was fantastic. When I made it ... not so much. Probably crappy American tea and the dried fruit (mixed chopped peel) I got wasn't quite right.

I think what glen is thinking of is called All Spice, it's one of my favourites. Parkin is a very different cake indeed, it's incredibly moist and has a very wierd, almost bitty texture to the cake. It's also very delicious. I actually had parkin only last week with Ginger ice cream. Looking at your recipe I see parkin is made with oats, that explains the bitty texture of the cake.

All spice is from the allspice berry , i think Glen is thinking of Mixed Spice, the Schwartz version has Ground Cinnamon (Cassia) (40%), Ground Coriander (38%), Caraway Seed, Ground Nutmeg (4%), Ground Ginger, Cloves.

Paul Roberts yes that’s the mixed spice I’m referring to. It’s not all that common here in Canada anymore. Allspice is indeed from the allspice berry and isn’t a mix like many people think. Check out the video about allspice that we linked to.

Lived in yorkshire all my life and honestly it just looks like what we would call a fruit cake. Todays cakes definitely have more spices, but I've never had it made with lard AFAIK, even though it was popular years ago.

What prompted me was you did say in the Yorkshire spice cake video, that old recipe used allspice that was a mix of spices. Therefore I thought you didn’t know allspice always a spice. I’m enjoying the videos. My mother’s cookbook was Purity which I have and I had the 40’s five roses. Carol

Nope - never once do I say Allspice. We natter on about 'spice mix' and 'mixed spice', which are called for in a lot of Canadian pre WW1 recipes, and a lot of English recipes even today.

That looked really lovely. I am a fan of lard in cakes, I admit. What kind of peel did you use please? It was so very brightly coloured. Our ready chopped peel here in the UK usually has orange, lemon and - weirdly - grapefruit in it, but you can buy whole peels and do it yourself. Never seen that gorgeous red though!

hang on Glen, slow down. i've only just managed to get hold of root beer ingredients here in England (no sassafras root, tho so will double sasparillaroot), & who would have thought that lactose would be so difficult to get hold of. i'm sure it will taste great tho! love the work that you share with us all :0)

Same here. Couldn't find Sassafras root anywhere, I guess they just don't sell that over here, and I gave up on the lactose. Still tastes really creamy and really, really nice. It looks like the Sarsaparilla that Glen made a couple of weeks ago. Made it a few times over the summer, goes down great!

Parkin is a bonfire night treat (November 5th) along with bonfire toffee (molasses or black treacle based) it is a staple of yorkshire bonfire parties :) and of course pie & peas

If you're making parkin, leave it wrapped in grease proof paper in a tin/foil for at least a month to mature. It gives it a wonderful slightly sticky texture on the surface! :) In the UK, we traditionally eat parkin around bonfire night when we light bonfires & fireworks to remember the foiled gunpowder plot by Guy Fawkes & co to blow up parliament.

Parkin is the best, you should try it. It’s not much like that Yorkshire Spice Cake, though, it’s a dense ginger cake with oats and treacle in it. Let it mature for a couple of weeks before you eat it.

*Yorkshire parkin is the place you leave your car! In Leeds 😀 nah bad joke, it's like a rich dark sticky ginger cake. Also wi' the Yorkshire spice cake I'd dump the peel in the bin (yeeack!!) & put candied cherries int cake instead & also have it with a nice wedge of Wensleydale Cheese*

Fun Fact: the reason why blackcurrants, red currants etc are called that is because currants (the dried grapes from Corinth, Greece) were very very expensive in medieval times. They had to be traded over and over, passing from one trader in Greece to another and another until they finally arrived, by ship, in medieval England. Same with sugar (from India, via Silk Road) and spices. That's why currants, sugar and spice are traditionally found in special, festive, foods, like the ones around Christmas and Easter. Anyway, because they were so expensive, people tried to dry other fruits to see if they could substitute the more expensive currants. In short, the fruit of the red-, white- and blackcurrrant are called 'currants' in English after the expensive dried grapes from Corinth. In recipes, however, 'currants' are ALWAYS the dried grapes. If white-, red- or black currants are to be used, they will be specified as such.

The thing we have in England is called "mixed spice". It's a great blend for sort of generic baking, although I always get more interested in recipes which are more precise about exactly which spices in which proportions you should use - rather like when I'm making a curry I like to use individual spices rather than "curry powder". Although if you find a nice curry powder, why not!

You guys know a lot more about maple syrup than I do... I live in Pennsylvania... I wonder if pa maple syrup tastes any different than Vermont or Canada... I just bought some that is made locally and haven’t tried it yet... we purchase real maple syrup for my nieces and nephews to have on their pancakes (and any other breakfast food they can dip into it) I grew up with “pancake syrup” which I must admit I enjoy but do not buy as it is nothing but flavored sugar water... thanks for your help... I’m sure your local syrup is amazing...

that looks a lot like a recipe we used in collage . we called it county cottage cake . the mixed peel we use in the uk is a lot different from the one you used . are mixed peel is a lot finer and mostly orange. parkin is more of a ginger beard . on that note have you ever had grasmere gingerbread?

Glen finds another winner! While checking out the other recipes on the page, I noticed the Boiled Fruitcake. The Bachelor part doesn't interest me. The "store for at least a week before cutting. This will remain moist for months." does. How does that work?

Soak the raisins and currents in brandy, whisky and rum or if you're tea total or want a lighter flavour soak them in black tea.

parkin is lovely... it is often eaten around bonfire night time... other things we eat at that time are treacle toffee and black peas (pigeon peas sometimes known as...the pea kids used to use in pea shooters) cooked for hours with lots of vinegar to taste when eating en.wikipedia.org/wiki/Black_peas

Is kitchenaid a television must because it is more silent? Noise is one of those significant parameters that are never mentioned. I have some old (1000 Watt) Braun, I am just in another price category.

I'm thinking that when this recipe was "new", it was considered a modern Christmas cake because it was baked in a pan instead of boiled in a bag.

I say wrap it in paper, toss in a tin, soak in rum or brandy and see how it ages.

How about bake it in cupcake tins, then wrap, toss, soak... Little mini cakes pre portioned out.

Looks similar to I know as a Dundee cake, fruity but not as heavy as a Christmas cake.

We used a mixed peel - so it’s a variety of citrus and fruits.

Yes, the stuff in the UK is usually candied orange and lemon peel.
