I'm back with recipes for salads to try this summer! These 1980s salad ideas maybe be old favorites or new to you - cucumber mint salad, white bean salad, and a slightly unusual fruit salad dressing.

SLICED CUCUMBERS IN YOGURT WITH FRESH MINT
2 large cucumbers very thinly sliced
1 1/2tsp salt
8oz plain low fat yogurt
1Tbsp finely chopped onion
1/4tsp sugar
dash pepper
1 1/2tsp finely chopped mint
1. Lightly toss cucumbers with 1tsp salt. Chill well.
2. Meanwhile, combine yogurt, remaining salt, the onion, sugar, and pepper.
3. Drain cucumber. Toss with yogurt mixture; refrigerate until well chilled - about 2 hours.
4. To serve; turn cucumber mixture into shallow serving bowl; serve with chopped mint
HONEY-LIME DRESSING
1c mayonnaise
1/2c honey
1c heavy cream, whipped
1/4c lime juice
1. In small bowl, combine all ingredients well.
2. Refrigerate, covered, until ready to use. Delicious on fruit salad.
TUNA AND WHITE BEAN SALAD
2 cans white kidney beans
1/4c red wine vinegar
1/4c chopped parsley
3 green onions, chopped
1/4c salad oil
1tsp salt
dash pepper
1 can (6.5oz) chunk style tuna, drained and broken into pieces
3 hard cooked eggs, quartered
1. Drain kidney beans; turn into medium bowl.
2. Add vinegar, parsley, onion, oil, salt and pepper stir gently to mix well.
3. Refrigerate, covered, to chill well - at least 2 hours.
4. To serve, toss gently with tuna and one of the eggs. Turn salad into bowl. Garnish with remaining quartered eggs.

I’m much more of a peasant than you, I’ve only ever eaten the canned stuff! But then, I grew up in Ohio where lakes caught on fire.

I had "bread-free tuna melts" tonight and last night for dinner -- empty a can of chunk light into a bowl, cut up garden dandelion greens and chives to mix in generously, some spoonfuls of dill pickle relish on top of that, a couple slices of cheese over everything, microwave for 60 seconds, and then splash it all with hot sauce. I also remembered to pause before digging in to thank the tunas that gave all so I could satisfy my appetite for them. I'm so unpicky about tuna, that I've eaten (and enjoyed every bite of) some that was probably cat food grade, but I also have a nice little stockpile of Ortiz.

I’m so happy you can take what people say with a grain of salt. At 68 and raised on the top of a mountain with no neighbors my mom would read her McCalls, Woman’s Day, Family Circle and Country Living magazines out out in the evenings while I drew or did some type of craft. That is how I came to love reading cookbooks like novels. You could be my daughter! 😂 My favorites are the 1800’s and the 50’s-70’s. Our recipes have been around forever usually only changing to update ingredients because they evolve over years or adding a newer spice because it’s readily available now. Plus they fall in and out of style. Whoever made the comment on that your recipe wasn’t from the correct era must not realize that. Now I’m speaking from the heart: I love you because I’m at the age where my mom, aunts and grandmas are all gone and all I have is loving memories of kitchen time with them. You young lady stir up wonderful memories that make so many of us happy to the core and makes us smile. That is what our world needs more of! So you just keep doing you, with or without tuna 🤩

I really enjoyed reading your comment. I also am 68. All of my aunts and my mother are gone, too. I was raised in the city but my mom and grandmother (who lived with us) were from Oklahoma (I currently live in the high desert of Southern California). I remember my grandmother making homemade noodles all the time like it was nothing. They made everything at home and it was always delicious. I remember it being so hot we would eat outside on the patio table in the summer in the shade. They would cook hush puppies, chicken, corn on the cob and we’d have watermelon for dessert. I was told not to swallow the seeds or a watermelon vine would grow out of my ears 😆! Such good lifetime memories. I hope you have a good week 🫶🏼

@@CarinaPiersay we must be kindred spirits! My fathers family are from OK and moms is from TX. My paternal grandma make what we called slickers which were just noodles that would be used as dumplings, in cobblers and any sauce. My mom on the other hand made dumplings like a cat head biscuit and they’d come out like big puffy clouds and her cobblers had lattice pie crust. Grandma lived with us so we are the best of two worlds just like you! I miss those days and this channel brings back wonderful memories! I was born in CA and we last lived in Pollock Pine before we moved to TX 32 years ago to raise our boys.

When I was young there was no air conditioning. And, we cooked on a wood stove. Salads were life savers in the Summer.

Whenever I think of McCalls I always think of sewing patterns because I have a ton of them. I’m 32 and wasn’t around in the heyday of sewing your own clothes, but my grandma was and she has some McCalls sewing patterns she gave me since she actually didn’t sew at all lol. I’m the only one in my family who knows how to. I wish they were interested in learning from me lol

One day you may have a child of your own or niece or nephew come to hang out, you teach them. My sister and I taught my kid one summer and she made a skirt. We wanted to get her to make a top to match but malaise won out, but come high school she needed to make a costume project and suddenly I was at the store buying her a sewing machine and helping her along, and then later the sewing machine had to go to college, so, yes, teach them. I fully believe the old sewing patterns from 60's- 80's are highly superior to other eras (even modern). Modern ones have changed the measurements, and are less clear than older patterns.

Mid 90's here in Central OK today, I had lunch with my 81 yo mom who lives next door. She made chicken salad and pasta salad and it was delicious. I learned to cook from her and am so glad, she's a wonderful cook. So yes salads are king in the heat.

My momma used to make fruit salads of apples, bananas, pineapple, mandarin oranges and maraschino cherries. She made a dressing of mayo and melted vanilla ice cream, which sounds disgusting, but perfectly complemented the salad. Thanks for the great video! I’m going to try the tuna-bean salad first.❤

My Nana had 2 recipes I remember fondly, one for a cucumber tomato salad that was basically just refrigerator pickles; it was vinegar boiled with a little sugar, salt, and celery seed, poured over the veggies and chilled for a couple hours. She grew her own veggies and herbs and I remember sometimes she would garnish it with fresh basil or lemon balm. The other was for a marinated veggie salad, I think the dressing was pretty similar, and it was poured over a mix of canned green beans (french style only! She never used whole green beans in any recipe, ever, not even green bean casserole), canned corn (shoepeg preferably but regular sweet corn will do), canned kidney beans and a jar of pimentoes. My aunt collected all of our recipes and had a family cookbook made for all of us, mine was destroyed in a flood, but I'll try and find my mom's copy and get the exact recipes.

Tuna is one of the few fish I actually like and eat. Beans, on the other hand, not a fan. But whether everyone likes everything you choose to make or not, you are the reason I watch, as well as seeing the cookbooks and some of the recipes themselves.

I wouldn't take comments about a recipe having been eaten in an earlier decade as a criticism. I think those comments are probably made by older viewers who know you're too young to have been around at that point. They just want you to know because they understand you're interested in when recipes were in use. Or they may just be sharing a memory. It's a compliment to you that they think you're pretty thorough and want to know. 😊 Or maybe not! 🤣🤣🤣 I haven't seen them, except once. And I think I added to that thread as a few other people did, taking a stroll down memory lane. ❤

I make a variation on the white bean salad - I chop fresh tomato into it, add a glug of olive oil, and generally a whole lotta chopped garlic. Let it sit for a few hours in the fridge and serve it with crisp little rounds of toasted baguette. I'd use some of the yogurt in a very similar mix to your salad, but with chopped cucumber, chopped green onion, and chopped garlic, plus a large amount of chopped fresh dill. Refrigerate. Then cook some salmon. My favorite way is to set it on a bed of dill and roast it, then serve it with the yogurt sauce - which is my amateur version of tzatziki. Just made up from stuff I found in my fridge. It's maybe not completely authentic, but it is on theme. Later note - just remembered you don't do much seafood. If salmon is a no, you could serve the sauce with Mediterranean spiced beef or chicken.

growing up, we only had one air conditioner and we had salads all through the summer, tuna and egg salad that was on a plate with lettuce, cucumbers and fresh tomatoes. I LOVED this as a kid. I still do this to this day. When it gets too hot, eating food makes me nauseated. The salads were filling but you didn't feel bad after eating. Cucumber salad is one of my go to's now.

I despise tuna but I'm still going to make this for my elderly parents. It sounds like a great way to switch up lunch & provide a good source of protein & fiber. I'll hold back a portion without the tuna for me to enjoy. Thanks for the recipe! I don't understand some people getting worked up over an ingredient they don't like. My favorite summer salad is watermelon, feta, red onion & mint. Easy, delicious & refreshing on a hot summer day.

I also like to make infused water in the summer as it helps to stay hydrated. Cucumber/mint, mixed berry, lemon/lime, so delicious. Take care of yourself & keep cool.

You inspired me to try making the white bean and tuna salad. Admittedly, I didn't completely follow the original recipe because I didn't have red white vinegar - balsamic was used along with olive oil. I also added garlic and cayenne pepper because those are given in my cooking. Let me tell you. It was AWESOME! Served on or with some crisp greens, the crunch is just a delight and is just what we need on these hot summer days. Thank you for sharing this recipe, it's one I plan on making more often.

During the summer, I love lime jello with grated carrots in it! My partner hates it so I rarely make it. I find it so cool and refreshing. And yes, people need to lighten up!

My husband and I were strict vegan for 7 yrs. Since lockdown, we are now plant-based forward. He refers to tuna as a "treat". I love the nostalgia of tuna casserole. It was the 1st recipe I learned in Home Ec in the early 70s. Love watching ur recipes and making them work into our lives.

my mom coleslaw with sour cream, mayonnaise, salt, pepper and celery seed and NO vinegar. It was made with shredded red and green cabbage, grated carrots and grated apple. DELICIOUS. I love this channel because some of these recipes were around when I was a kid.

Anna, it's 10 PM here in Phoenix and it's 100 degrees F out right now. I miss Ohio temperatures, but I do not miss the humidity you guys get in the summer. But, 100 at 10 PM definitely sucks. And the next two month in July and August are even worse. Loved this look back in time. Many of these recipes remind me of my coming up years, back in the late 60s, 70s, and very early 80s. (I am 59.) Thanks for this; as always, it's such a delight watching you do your thing.

I made the stuffed tomatoes from a couple of weeks ago! We liked them, it was something really different for us. The tomatoes themselves were subpar, so I'll wait a few more weeks and find some really good fresh local summer tomatoes. That tuna and bean salad will be in my lunch rotation this week! Ill probably put it on salad greens.

Salads seemed to come into their own in the early 1980s. No longer were they consigned to side dish status; they were meals in and of themselves, especially when you had delis offering sampler lunch plates, with offerings switched around daily. My favorite Bel Marin Keys lunch plate was tabbouleh, chicken curry and white bean, the last of which I was never able to recreate. Spaghetti salad started this trend, I think, with colorful choose-your-own veggie options not concealed by gobs of mayo. Salads and truffles--chocolate truffles--are what I remember from the 80s. The salads stuck.

I take regular plain yogurt, put in a coffee filter in a sieve, sprinkle salt on top and let drain in a bowl overnight in the fridge for a great sour cream alternative. The whey from yogurt can be used to make yogurt, add to bread, smoothies, etc.

I’m in Scotland- 85F would make me want to melt too. I’ve lived in the south of England and 77F feels very different there to how it does up here. My parents live on the east coast of England and it hit about 105F there a couple of summers ago and that was surreal for them to experience! We’re lucky if it hits above 70F where I am but it’s nice when it does, not too hot or too cool- just pleasant. :)

It’s getting hot here (high desert of Southern California). It isn’t unusual to have over 100° often in the summer 🥵! It isn’t cool and breezy like in the Los Angeles basin! I enjoy your videos. If you don't like tuna just don't add it and make an egg & white bean salad. You could also use chicken or shredded turkey. Don't be afraid of change .. you don't have to follow the recipe exactly. Personally I love tuna ... You do you ..

Love watching your videos. Regarding the honey lime salad…my mom always made a honey lime dressing for fruit salad with just honey, lime, and fresh mint. It’s SO GOOD and refreshing without being heavy. You might like something like that better.

As it happens, I made jajukh, the cucumber recipe you made, but with minced garlic along with the mint, on Friday! I use plain whole milk yogurt. One set of my cousins is half Armenian ancestry. I picked up various Armenian recipes over the years. Now, the honey-lime dressing is different to me! Learn something new every day. Can't wait to try it. I can understand *why* it's just whipped cream, no sugar. Honey is pretty heavy. Yay! Meijer brand beans! Yeah. The chilled dressed beans look tasty on their own. So, tuna haters- substitute another can of beans! I'm going with both tuna AND beans! Totally off-topic, there's nothing like an old-fashioned midwestern kidney bean salad, with pickle relish, minced onion, celery or celery seed (I know celery isn't your thing- one aunt who hated cekery too subbed peeled cucumbers), and mayonnaise. Books bring up what they bring up, when the authors bring it up. I don't think people mean any harm. Your videos bring out SO SO many food memories!!!! People usually love that. ❤ Sadly, Birchwood Kitchen is closed quite some time ago. I grew up in what's now Wrigleyville. I don't live there now! Have a good week. Hope you're recuperating well.

80 degrees is too hot for me. Think the leftover honey/lime dressing would be nice in a coleslaw or carrot/raisin salad. I like a good chef salad. Need to make salad nicoise again. Julia Child has a wonderful video. She tosses each ingredient in the dressing before plating. It's such a pretty salad, every item in it's only little space.

That tuna and bean salad is very Italian. It’s a pasta sauce and may include escarole and parm.

Love that apron on you. It's my favorite, not only is it adorabe, but so practical. If you something splashes on you, no one will ever know! Also for the left over yogurt, there is a recipe out there from the 70's or 80's in which you marinate chicken overnight in plain yogurt then cook. I have no clue what the recipe is exactly, I always wanted to do it though, so maybe you can find that to offload all that yogurt?

I'm not sure why, but I seem to only enjoy beans in cold recipes, like salads, and the tuna one looked like a tasty one. I was thinking that it would also be good if you put it on top of a bed of crisp romain, or added other herbs and beans to it. Also, as a Middle-Easterner who's been eating some variation of yogurt and cucumbers all my life (which I love), I recommend trying that recipe with the addition of a little minced garlic. In addition to mint, I also love adding other fresh herbs, like cilantro, dill, tarragon or Thai basil (Italian basil would be too overpowering).

In FL 🌞 🥵 we do love those cold salads! I need to increase fiber, anyway, so the bean tuna salad is a great recipe, I’m all for the tangy vinaigrette part! I’m glad we have Anna’s channel as our comfort throwback/nostalgia, cookbooks are so much fun to look thru even when not planning parties!

You can do whatever recipes you want. I still love the vids even if there is an ingredient I don’t like. You can’t cater to each exact like and dislike. That bean salad sounds like the perfect summer lunch and I love the addition of the eggs.

Love tuna, always have, so the tuna/bean salad looks like something I might try. It was 105 degrees here last week, so I made my mother’s recipe for good old fashioned potato salad. Left out the celery seeds she used to put in both potato salad and coleslaw and I hated them! I do think it was a fad back in the 60’s to add them to salads. Love your channel and look forward to more!

My mom used to serve that salad of white beans without the tuna as part of a cold summertime meal with Caprese salad and poached Salmon she would start with a cold cucumber soup. Tres Chic!

I just love your videos! I’m so happy you’re still making content I put on your videos to listen to / watch when I’m doing chores or cooking etc and it just brightens my day! ❤also I love tuna and always have it on hand so I’m ALWAYS looking for fun new ways to use it up! Please do a video including your refrigerator pickle recipe. I have bought them at Amish grocers and they have been delightful. I have wanted to find a version that I can make myself. Thank you for your videos. Many times I have a cookbook you've used. We got married in the mid-70's and between my mother's cookbooks and the ones I've collected, there is a wide mid-20th century collection.

I love light tuna in a can with mayonnaise, finely diced onions, and finely diced celery.Salt and pepper mix well and refrigerate for at least 4 hours.Stir well before serving.
