To be clear, there isn't anything wrong with MSG. It is in a lot of foods naturally anyway

Yep. I was going to say the same thing. Generations of Asian grandmas that went before us cannot be wrong. :) It's like anything else: moderation.

Agreed! Most pple criticizing use of MSG are the same ones eating ranch and potato chips which contain MSG by manufacturers.

THIS! Was just about to comment the same thing. It occurs naturally in so many foods like tomatoes, mushrooms, or cheeses. Not to mention it's also in a lot of processed foods that are commonly eaten anyway.

Yes. MSG totally fine. It was a mistake to label as bad. Research it.

@@kay3ear13 even failing that, I doubt they also abstain from mushrooms, a lot of red meat, tomatoes etc. which contain the MSG compound naturally. it's unfortunate that a little misinformation about something (or turning it into a ~scary~ initialism) can turn so many people off it

I'm pretty sure MSG isn't actually bad for you... scishow did a video on it and it was more of one of those cases where someone said something in a study that resulted in a lot of bias afterwards

If I remember correctly, Alton Brown refuted the whole MSG thing and I think it was taken out of context due to misinformation as someone stated above. But also, there's a bit of racism that played into the whole scare.

MSG is one of those frequently used ingredients that are all right to use unless one has a sensitivity to it. Like nuts to those who are allergic. Two people in my family react quite a lot to MSG while the rest have no issues with it at all.

Racism against Chinese immigrants in America played a huge part in the biasness of the results of MSG research. One term that came out of it was literally “Chinese Restaurant Syndrome”. Also, people need to realise that everything is bad in excess. Not just MSG but salt and sugar and even water as well.

My pantry is ridiculous. lol I have both Mexican and Asian staples. Which means two or three types of rice and tons of hot sauce.

I feel you on the hot sauce and having 5 different kinds in my kitchen and always looking for more. I’m surprised there’s no hoisin sauce on this mix!

I love adding Mung bean sprouts to pho. At a local Vietnamese restaurant they used the fresh wide rice noodles for the pho, and bean sprouts in a separate bowl to add in if I wanted. Of course, other sauces on the table to add as well. Yummy. 😊

I am Vietnamese and can confirm the brand of fish sauce and oyster sauce that Dzung has here are indeed the best 😊. However, we only use that oyster sauce for one dish that is only made occasionally due to the msg. P.S. We always have coconut milk and lemon grass in the pantry for cà ri gà as well!

Hi, if you want to have oyster without the MSG, you could try the gluten free oyster (lee kum kee green bottle). It's the same ingredients as their normal oyster without the wheat flour and the MSG.

When I was cooking a lot of Thai/Lao food I couldn’t nail the flavor like the restaurants, and then I bought the Thai Healthy Boy Mushroom soy sauce and realized that was what was missing. And another tip is Liquid Aminos tastes pretty much identical to Golden Mountain and Maggi sauce. For other Asian cuisines, I use an imported Kikkoman Marudaizu soy sauce (big plastic bottle), and it works well. I like it bc it’s smoother than your avg Chinese soy sauce which tend to be too harsh to me. I do like the upgraded Lee Kum Kee Double Fermented and Supreme if u go the Chinese route. If I go Korean I use entry level Sempios like F3 bc they are unique, bc they blend a Liquid Aminos style and traditional brewed soy sauce together. The Sempio super premium 701, tastes just like the LKK’s I mentioned so if I have one I don’t need the other.

EVERYONE uses MSG in Asian cuisine. It’s not the devil. It doesn’t “cause headaches.” And that sideways click of the tongue…I don’t think anyone has done that since Frank Sinatra made a pass at Mia Farrow.

Thank you for this video especially the ways you use the ingredients across Asian types of cooking, very helpful. One thing I wanted to mention to those concerned with gluten be careful when buying sauces where soy sauce is added, most of the time it will have gluten(I learned the hard way). I have a lot of these items or gluten-free alternatives in my pantry, and I also have a substitution list for things like the jarred oyster sauce as it almost always has wheat from the soy sauce. Thanks again for the great video!

Living in Arizona for 10 years I was obsessed with cooking and eating Mexican food so that meant SO many salsas and hot sauces. Now I am into asian cooking so that is bringing more condiments and sauces. I think I need another fridge and pantry for condiments LOL. BRING ON ALL THE SAUCES!!!! PS, the hubs doesn't have the same passion for it as me and thinks "what's the difference?"

The 3 Crabs brand of fish sauce is definitely the best. My won't really use any other brands....not even Filipino brands...and we're Filipino, lol. But we are fully stocked with multiple East and Southeast Asian sauces that last for months cuz most of them are fermented sauces.

Thank you for sharing! I'm adding some of these to my grocery shopping list now! and I agree with MSG, my mom is highly allergic to MSG and if she eats something with it without knowing, she'll have symptoms similar to food poisoning. Its the worst. I always have to check the labels.

Hmm...I'm gonna have to try that chili garlic sauce you got at Trader Joe's. I make my own all the time from minced garlic and pepper flakes in oil. I also put it on EVERYTHING. It's amazing on all soup noodle dishes, chao/congee, spaghetti, dipping sauce for dumplings, etc. I tried making the Chinese version with the 5-spice powder and other stuff in it, but it was too much going on and wasn't as versatile as just plain garlic and chile flakes.

There's nothing wrong with MSG, it's naturally occurring on tomatoes and mushrooms. And they use it in a lot of savory snacks in the States

Hey can you make Cơm Bò Lúc Lắc (Beef cubes with white rice, lettuce and tomatoes) I just want to learn how to make the sauce that they cook beef in. I love this dish and now our Vietnamese restaurant is closed and I been craving it :)

I would recommend Wok Mei oyster sauce. It has no MSG. You can buy it at Whole Foods =)

I was side-eyeing you for not including sriracha at first, but then you rummaged around for it so I forgave you. And initially, I didn't see the lemongrass since it was hidden and when you showed it, I was like, "Yes! Legit!" Hahaha! But I think you're missing cilantro. :)

@@ladydarkb5656 I started growing it in a container on my balcony so I can have fresh lemongrass. :) It's the one edible aromatic that I was able to grow (mint and basil died due to white flies). I also like to use the grounded up frozen lemongrass for convenience, though.

I like to use dark soy sauce because it has a richer taste and gives the stir fry that golden brown color. Swan and Datu Puti are both great brands and pretty easy to find in most Asian stores.
