20-Minute Fresh Tomato Soup with Garlic Chips

You know how sometimes you’re eating spaghetti with a delectable fresh tomato sauce, and when you get to the bottom of the bowl, there are no noodles left, but just enough sauce for a last little forkful or swipe of bread? Or maybe you have to lick the bowl?! This ridiculously simple soup is meant to re-create that perfect bite, but you get a whole bowlful, plus a scattering of crispy garlic chips, and we all know tomato and garlic are already besties. Don't use canned tomatoes for this; they’ll wind up tasting thin and acidic because of the abbreviated simmering time. This is the easiest way to celebrate about-to-burst fresh tomatoes.

Are you a sweet bruised tomato or a juicy taut heirloom? Lmk

Both. A big heirloom tomato is a treat (they're kinda $$). But I get a lot of good eating from that one giant tomato. On sandwiches - a blt but without the b, with sweet Vidalia onions instead and homemade mayo. A cucumber and tomato salad ... and that's about it.

I made this soup at midnight bc it was too easy and delicious looking not to! My mother had given me the most beautiful, bruised and beaten tomatoes. They were perfect. I loved them! The garlic was soooo good too!!! ❤

I prefer Homestead tomatoes because that's what we grew up growing & eating. We peel, slice and let them sit in the fridge until ice cold then sprinkle on some salt and eat 'em up! We live in Texas so when the tomatoes start growing, we have an abundance and can't eat them fast enough or give them away so im definitely saving this recipe!!!! We also eat watermelon with salt and blackberries in a bowl with sugar and milk. 😁

Our yard will soon be overrun by big tomatoes and I sure know what I'm doing with the first batch! We do have itty bitty spoon tomatoes (highly recommend, they're pea sized) coming in hot but you can't make soup with those - you gotta just stand by the vine and have yourself a moment of joy with a lil pop of summer flavor 😎

When I make this, all I hear is “WHAT is in this” and then I explain that it’s literally tomatoes, oil, garlic, basil, salt, pepper. That’s it. That’s all you need when the tomatoes are tomatoing.

So many "nopes" in this video. The tomato mill that I don't own and can't afford to buy. The reference to heirloom tomatoes, which in my experience are terribly bland; and the mention of "seconds" at farmers' markets, something I've never seen at any of the markets here. I noped out when the leg went up on the cutting board. Yikes.
