Hey so a bit of info the kulfi you talk about was different from the kulfi in the video kulfi indeed was from 16th century but it was most likely not frozen as ice and freezing stuff started in the 18th century but i love it hehe

Am sure all our grandparents ate ice gola n kulfis as kids and there were no refrigerators then. Edit: Kulfi was first made in India in 16th Century Delhi where horses were used to bring ice from Hindukush mountains. Vadilal started in 1926 and during 1800s ice used to come via ships brought by the Trading companies.

ah they mix ice with salt to freeze the milk. it is something wr learn in physics at school. they actually lower the melting point of ice by adding salt. so if 0°c was ice now it will be water but wait what does that do ? we need energy to change from solid to liquid and liquid to gas only after that criteria is filled will the temperature change. something called specific heat idr exactly. tldr: Point being salt makes water melt. melting absorbs heat from surroundings hence freezing the surrounding stuff.
