You were very brave with the spicy pickled eggplant! As usual, everything looked mouthwatering-the cherry filling bread pudding, artichoke heart pita pizzas, and red lentil/rice dish. I’ve said this many times, but you’re so creative and good with using your pantry and freezer supplies in recipes that give them their best shot at being delicious. When I have something to use up, I tend to not put that effort forward-so you’re inspiring me to do better! And you used up so many things this week, too!

So I saw Jessica from Three Rivers Homestead make a French toast type bread casserole and she didn’t have enough bread ends so she threw leftover waffles in the casserole to substitute the bread. She just tore them into pieces. I would have never thought to do that. I bet you could use leftover pancakes too

That's a great idea to use up those freezer waffles! Unfortunately my pancakes don't last too long with Mr. Wanders around...he likes to make PB&J sandwiches out of them a lot LOL

I have tried to make french casserole like that I didn't like it. Standard french toast is much better.

Maybe a bean burger using either the can beans or some dried beans & using either the panko or stove top as a binder ( kinda like a black bean burger if you will.) if you mash the beans & use your binder you could even air fry it. My hubby likes it. With frozen veggies you can skip an egg & just use a binder like panko, stove top, & even pancake mix & air frying or frying them.

If you're putting any kind of sauce on pizza if you put a light coat of olive oil or another oil over the surface it keeps the bread from absorbing the liquid from the sauce and it turns out better. Unless you're going for that. :) Just a tip I learned from my niece who works at a pizza parlor lol.

What if you had heated the tomato juice and added in your dehydrated tomatoes, little tomato paste a diced carrot and some onion, chicken bouillon or the seasoning packets. Makes up a tomato soup. Add in a little basil and stir in a little cream or milk. There is also a salad that you use two packets of ramen in it called Ramen Noodle Salad. Also if you have any canned biscuits you can make garlic knots out of them. The canned chicken might have been better in a chicken & rice casserole mixed with two cans of cream of mushroom soup, 1 cup of raw rice, the mushrooms you used in the ramen, cup of grated cheddar cheese and 3 cups of chicken broth. Add in sprinkle of thyme, garlic powder, black pepper. Bake at 350 degrees for 35-45 minutes. Checking and stirring if needed. Then serve peas as a vegetable side dish. I would have used the scalloped potatoes to make a cheesy potato soup or corn, chicken and potato chowder…if you did not want to make the chicken & rice casserole. Either make the items stretch for two times or just one. If you make a cream sauce and add in some of your pesto cubes will make a wonderful creamy pesto! Then just add your cooked pasta( could also add chicken to this). I think it would be interesting if you ran a contest with ingredients you select and have your viewers have to create a meal from it. Then see how many different ideas you get! Pick three of them and try them out and see which one you like the best. The ingredients can all be the same for one challenge or each time getting harder as ingredients dwindle down. Then you pick from three different ingredient list or from just ideas off of just one each time. Kinda like show called chopped on Food network.

I've never tried the dehydrated tomatoes in a soup before! Great idea! Chicken and rice casserole is always a great idea :) Thanks for sharing Nancy! It's so great to have all the lovely ideas but, of course, it's very hard to have time to make them all. It's so hard to decide which ones to try! It's fun to try out ones that I think Mr. Wanders and I will enjoy!

Glad you liked the red lentil curry. It's a great meal for spicing up to your taste. With the custard powder or coconut milk powder - I put the powder I'm using in a jar, add some of the cold liquid from the recipe, shake it up and then just add the mix to the pan. If needed, I wash the jar out with some more of the water/milk from the recipe. So much less stirring needed

I am so envious of you to be able to get Bird's Custard Powder. I don't think I've ever seen it in the US. I used to get it some times when we lived in Asia.

It's just that when I saw that can and the distinctive label, it took me right back to the Philippines where we could buy it at the import section. I remember that when we went to Hong Kong I bought some there too. LOL. I always go to food stores wherever we travel.

Bread pudding is beautiful! You had everything with artichokes to make a hot spinach and artichoke dip! Plus use pita bread to make pita chips( cut into triangles and brush with olive oil, sprinkle with garlic salt and bake). We eat it sometimes as dip for light lunch or dinner. You can also use it to stuff a chicken breast, and you can also make an artichoke soup.

The cherry bread pudding looked delicious !! I have a little bit of cooked chicken left over, and think I will actually try your scallop potato casserole tonight for supper. Fingers crossed...lol Knock on wood, but in Nova Scotia we don't have hardly any snow....which makes me very happy. At least Mr Wanders like the pickled eggplant. Something I don't like either. Great video, as always

I really enjoyed the scallop potato casserole! Definitely recommend for easiness and comfort food! Ya...that pickled eggplant was a stretch for me! I managed to eat it on the pizza but I won't be going back for more lol We are getting rain now here which is making a giant mess of everything :(

The red lentils soup was something I had never seen before. I've never seen coconut powder like that. Just cans of coconut milk. This is a recipe that really looked neat to me. Really enjoyed this video 💝

Welcome Edmonton! I’m in the Interior of BC. The weather sure changed fast! A cold snap and now it’s much too warm for January and everything is a drippy mess 🤮 I would have liked a bit more snow up there in the hills but all I see is rain in the forecast! I heard you guys got REALLY chilly! 🥶

I have two suggestions one is using the scalloped potatoes with some added ham and ham and beans is always delicious or you can use the lentils with ham as well. I love how positive you are with the pickled egg plant. I have texture issues with eggplant and I’m not sure I could have even tried to use it after I tried it. The cherry bread pudding looked wonderful.

I'm glad you enjoyed artichokes on your pizza! I first tried it when living in Toronto. There was a gourmet pizza place my work used to order from, that offered a pizza with artichokes. It was so good! This week, I made a savoury bread pudding/strata with ham, broccoli, and cheese. We topped it with Bearnaise sauce. My daughter went nuts over it. We had it for breakfast, she then ate it for lunch and wanted to eat it for dinner, too. We said no to the dinner. It made enough leftovers for several meals. She ate it all up.😅

You could make a parmesan panko topping for the scalloped potatoes. That sounds nice. I have also heard of people adding cubed ham to scalloped potatoes, if you have any.

Unfortunately I'm all out of parmesan, even in the bigger pantry! I did find a fair sized ham in the freezer so if I cook it up that sounds like a yummy idea :D

Not knowing what you have in the rest of your house makes it so hard to give suggestions 😅 I use split peas for ham and split pea soup, I love adding carrots to mine. We make beans and keilbasa (i dont like hotdogs so its not quite beans and weenies) i enjoy jello just the way it is but you can always do some sort of "minnesota salad" which generally requires cool whip or whipped cream with a jello packet and fruit. I dont cook with lentils but i love having the scalloped potatoes or stuffing just as a side to a protein (you could totally use the bbq sauce for bbq chicken breasts baked in the oven)

The cherry bread pudding looks good. I want to try your red lentil Dahl on rice sometime. I have to buy some garam masala first though. Is there a make your own recipe for that? I'm really not sure what kind of spice that is.

Loved your video! Only thing I would say is if you watch take your curry up a little, dry toast your sesame seeds, in a small skillet toss in some sesame seeds and heat for a minute or so, tossing carefully till toasted, can toast a head of time and store in a container.... toasting the seeds adds another notch of flavor to any meal. Thank you for sharing! ❤
