Why do I have so many canned green beans in my pantry 🤔Apparently I thought it was a good idea to stock up on an item we barely use when it's canned. 🤣 A couple of ideas is to: 1) Add to a minestrone or veggie soup 2) Make a mixed bean salad 3) Included them in a chicken pot pie or cottage pie 4) Green beans(drained) & homemade marinara sauce - I tend to simmer covered for awhile for the beans to absorb the flavor of the sauce, serve as a side 5) Green beans, potatoes with ham or cooked sausage (polish/kielbasa) in a crockpot, can also add cabbage, onions, tomato paste, herbs to your liking 6) Warm up the canned green beans in it's liquid, then drain & add 1 teaspoon of butter or bacon drippings, 1 tablespoon grated parmesan cheese (or more) , and a pinch of dried thyme (or other dried herbs) or more to your liking and give is mix can also add a pinch of garlic powder 7) Southern style recipe - 4 cans green beans, drained - 1 can mushroom pieces, drained - 1/2 onion, minced - 3 T Butter - 2 T brown sugar - Salt and pepper to taste - Add all ingredients to a slow cooker on low for 4 hours. Stir and serve.

An other great week of pantry meals. I've never eaten canned green beans but cooked green beans are great with a little EVOO and salt. Maybe a few thinly sliced onions too. Cold as salad is favourite.

Use your crockpot, in bottom add chicken breast, can of drained green beans, can of cream of chicken (don't have any make some from a rue) then add box of stuffing on top. Of course season your chicken and green beans. It's so good. You can google the ingredient's and a more detailed recipe will come up. Also for our home canned green beans we have bacon grease, season salt, pepper, and make sure you drain most of the water before you cook.

Pork tenderloin IS the best meat for pulled pork. In the bottom of a crockpot goes 1 c chicken stock, 1 t dehydrated minced onion and 1/2 t minced dehydrated garlic. NOW - cut the tenderloin into 1” slices. Cook on low 7 hours. Perfect. Save any juices for stock or making gravy

Same as another comment- I use bacon grease to cook green beans as well, and with some caramelized onions. Even if you just cook it up with some garlic it helps!

I was away most of January and didn't get to do pantry challenge this year. :( But I'm still trying to do at least 2 meals each week with pantry stuff, so I can clear a little out. I add just butter, salt and lemon pepper to green beans sometimes. I really like the trader joe's lemon pepper that has dehydrated lemon peel and peppercorns and has a grinder on it.

We add a little bit of bacon grease, or ham hock, a little bit of sugar and some onions. And cook the green beans for a real long time. Or if you have the time, use the crock pot.

Probably when you were measuring your pancake mix for your muffins you had more in your recipe than it called for. I usually weigh my dry ingredients because it's so so easy to over measure. Just soak em in milk and eat with a spoon. yummy. You're doing a great job!

for canned green beans we do what is called loaded green beans. I do 2 cans 1 drained one not 1 beef bouillon cube, onion and garlic powder, soy sauce 2-3 take out packets or few table spoons whatever looks good and 1 table spoon of brown sugar. let it sinner until almost all the liquid is gone. They are so good. You can also add bacon or ham but we skip that and just stick with all the pantry items.

canned green beans, saute onion and garlic, when soften add beans till warmed through then add cheese on top let melt coved off burner. can also add chopped or sliced almonds.

When I cook canned green beans I first melt some bacon fat, then dump the drained green beens in and also a can of chicken broth, and season with Goya Adobo. Delish!

Great meals this week, Jessica! I especially like the crispy mayo chicken. That looked really good! I looked up your rice flour on Pinterest last week, as i was curious. It explained the difference between the two and what you use them for. One of them could be used to make pizza crust. I thought it would be a great option for a pantry challenge!

When you made that vegetable soup, did you drain the liquid out of all your canned veggies? I would have put it all in the soup because that liquid had lots of nutrition. Thanks for the idea of lentils because I have bags of different kinds and tend to forget to use them. I didn't make it the month without shopping for two reasons: 1. Husband HAD to take advantage of a soda pop sale. 2. I had to take advantage of two stack 'em coupons to use at a store where I usually don't shop. I got some tremendous buys, though, and my overall spend for the month is GREAT. I'm ready for February.

Great tip! I don't think I included any canned veggies in the soup but sometimes I forget to just add all the liquid as well :) Sometimes those sales are just too good to pass up! It's better to buy when the prices are low!

Have you ever tried making galic confit? I find it so handy. When I need garlic in a recipe, I can just toss in a spoonful of that and stir it in. The oil is also delicious to cook with. It freezes beautifully, too.

I haven't. I sometimes buy a minced garlic and ginger paste that I use a lot that is very handy! i could blend a bunch of my garlic up to keep on hand :D

That crispy mayo-soaked chicken dish looked mouthwatering! And so did the vegetable/beet soup, and the pulled pork dishes. I don’t get how your box of salad still looked so fresh. One of my biggest frustrations is when I buy salad greens, because for me they never last even 10 days! I don’t know what your secret is, but all of your produce seems to last so long. What is your secret? Anyway, enough of me whining, you are killing this pantry challenge! So entertaining!

It's how fresh the vegetables are when the store gets them. Some stores have quite old veg 😢

Some of the produce I use is mine from the garden so they are as fresh as can be when I got them and they last a really long time in the fridge actually! My carrots from last season are still doing really well in the fridge. I agree with KatV, it really depends on how fresh it is when you get it. Salad greens fresh from my garden will easily last over a month (often two!) in the fridge but sometimes from the store it's barely a week and things start to look rough :( I was happy that salad mix was in such good shape!

I add the seasoning to the mayo when coating chicken. I always use all the mayo but there is often panko crumbs and the seasoning.left. Adding the seasoning to the mayo ensures I get it all. I also add it to the egg when I use egg and crumbs.

Everything looked yummy. I quite often coat chicken in mayo and cover with Parmesan. It is pretty good. If you have any left over cranberries you could make into sauce then there is an ocean spray recipe online for chocolate cranberry fudge cake. It is also on the back of a can of ocean spray cranberries. I made it without the icing and it was pretty good. It was a bit flat because my cake pan was 9” instead of 8” but it was almost more like a brownie. Might be interesting for a dessert or treat

I don’t want your readers to think that they can’t use pork tenderloin shed it. That’s the only meat I use and it shreds perfectly. You just have to cook it on low for a long time and put a little acid in it. I use oranges. It’s a perfectly good meat to shred.

First time watching you from the U.K. gosh, do you add sugar and salt to everything? My fav coleslaw is chopped cabbage (red and white), fennel, red onion as a basic slaw, mixed with half and half mayo and natural Greek yoghurt. No extra salt (the mayo already ha# this) nor any sugar! I jazz it up by adding walnuts and raisins, or cheese and grapes on occasion. I have never ever added sugar to my soup either! I see lots of folks from the US also add salt to meals with cheese, which has tonnes of salt in already. Recommended no more than 6g a day for good health… I wonder what the national average is over the pond? You are entertaining to watch though! ❤

I do tend to like things on the sweet side but I wouldn't say I add very much salt hmm. Your coleslaw sounds great with walnuts and raisins! I make a nice carrot salad with raisins and mayo that sounds kind of similar. I'm not in the US but I do add some salt especially when I am cooking from scratch without prepared foods, as they don't have much salt in them. Certainly add salt to your own taste! :D

I think if you had cut your chicken in half lengthwise your chicken would stretch further and would not run the risk of getting overcooked on the outside and undercooked on the inside! This way you could have sliced one half up to put on top of your salad. Also, the other half could have been made into a chicken sandwich, with cheese, lettuce, tomato, onion, dill pickles, mayo and ketchup & mustard . Then roasted some potato wedges/ fries in oven. Also, if you had basted your chicken in ranch dressing or sprinkled ranch dressing mix over the mayo, then topped with shredded cheddar cheese and bake in oven, fried a couple pieces of bacon to crumble up on them after they come out of oven is really good. I just couldn’t get into the soup. You are too adventurous for my tastebuds. Lol I would have pickled the beets, just made lentil salad and cream of carrot & ginger soup. If you add water to the root beer it cuts the fizz in the soda( carbonation) which is why it is used in recipes. This tenderizes the pork or beef you are using while adding flavor. Plus, placing pork in frozen added in even more water reducing flavor and tenderizing process. Instead of adding in beef seasoning next time try liquid smoke and some onion cut into large pieces to be scooped out. Then you can add some bottled sauce to what meat was cooked in to stretch your sauce and give it more flavor. Then you can use it to make other things out of it: barbecue pizza, baste chicken in oven with( like cocoa cola chicken), pulled pork nachos or pulled pork over oven fries with this sauce drizzled over this, then topped with shredded cabbage or your slaw. Maybe if you had on hand enough different vegetables ( canned and fresh), made a copy cat version of the Olive Garden’s minestrone soup. I think you had a lot of what goes into it…just needed some red kidney beans, could have used some pasta out of boxed Mac & cheese( you do not need much, because it swells up and soaks up broth) so I cook my pasta then add to cooked soup as it is eaten. Also, if you put sauce over shredded pork after placing it on buns/ bread( at some barbecue places just plain whit bread… not toasted is served along side of pulled pork), instead of mixing all of it with sauce. Then you could have made pork carnitas out of test if you had some flour tortillas. Just some ideas on how to change things up and stretch them even more. Hope some ideas might help in months to come. As always love watching creativity in your kitchen! 😊

Pound hamburger with stove top stuffing mix……meatloaf with bbq sauce on top. Love to see what you do with those canned beans. Other than that, I’ve got nothing, but can’t wait to see what you come up with! ❤️💚💙🩷🧡🦋🦋🦋
