In the US the only thing we really use oxtails for is soup. But this dish looks incredible.

Excelente guia para preparar colita. Como sugerencia deberia agregar en detalle los diferentes Ingredientes que usa en cada preparacion, hay ciertas especies que no siempre disponemos en nuentra Zona. Saludos desde Santa Cruz, Bolivia - Sud America

Oxtale is the main ingredient for kare-kare here in the Philippines a stew with peanut sauce and shrimp paste.

But without the skin, Cut into pieces ox tail might be really cheap at your local butcher. Ask for it!

My grandmother cooked oxtail regularly. Very fatty, but quite delicious. Was once considered ( from my area ) cheap food. Now expensive for some reason.

В Осетии просто суп варят, но шкурку от хвоста снимают, но они знают толк в деле шкурка тоже полезна я поняла благодаря шефу!

Хозяин берёт самые большие, мясные куски, а гости - поскромнее. Есть и посматривает, не наглеют ли гости, не не съели ли лишнего. Г - гостеприимство )))
