@@stevenn1940 that’s crazy, but mine is the same. I finally got an induction hob (basically just one like they had, probs just cheaper) and it’s wonderful. It heats up fast, I can choose a temp I want to cook at and it’s way more consistent heat-wise than my electric or gas hobs. I cook for a family of five every day. A protein, two cooked veg and a salad, every day. And sometimes rice or something. And most of the time I only use my induction hob, even tho I’ve got five others to choose from. I loved my induction hob in Hong Kong. Coming back from work at 2am, fill a pot with rice, water, meat and some veg. Set it for 23 minutes have a shower, and coming out to a hot meal for dinner and pack a bit to take to work at 7am..... I was barely human after 3 years of that. But the hob helped so much in keeping me human by making home cooking so easy. Did soups and sauces quite well too. It was a cheap thing and lasted the whole time i was in that shoebox flat.

With the coffee machines, the main elements that will change espresso flavour (other than the actual beans) are: 1. How many grams of coffee 2. How many mLs of water 3. How finely you grind the coffee 4. How firmly you tamp 5. How high the water pressure is Unless your machine is measuring and changing these things, you just need to get used to the machine you use and properly calibrate it for how you like it.
@ukgroucho
@ukgroucho 2 жыл бұрын
One of the biggest things that will affect the flavour of your coffee is water temperature. All of the other things you list matter a lot but water temperature can make the difference between a lovely smooth fruity expresso and something that tastes a bit harsh. I've played with loads of ways of making coffee over the years including a number of decent bean to cup machines where you can adjust the temperature and after bean selection and correct grind the temperature seems to be the biggest variable.

One kitchen equipment upgrade that made a huge difference for me was my microplane grater. I used to have a cheap one and it took ages to zest anything (I used to groan when I saw it on a recipe because I knew zesting a lemon would add about 20 minutes to thr recipe). I thought my lemons were "too old" and the skin had gotten too soft. Early in lockdown I tried a (sorted!) recipe that called for zesting 3 lemons and actually pulled a muscle in my shoulder. It took that to make me go "maybe it's the microplane itself". I got a more expensive one and now zesting any citrus is unbelievably fast and easy. Made a huge difference!

I own a Vitamix. It does what it does very well, but it's hopeless for small jobs. There are different whisks for different tasks, but expensive ones last longer than cheap ones, for the most part. Cheap and low maintenance. Does the job. And if I want a special coffee I go to the coffee shop. I mean... with anything there will be a point to where the return rate will even out. Cheap ingredients aren't horrible, but I'm not buying stuff that has a list of chemicals on it. If you're talking about raw fruits and veg, it's already pretty cheap. You don't need the best machine to make anything,. It's about the longevity of the product, or if you are good at cooking go at it with "old fashion" items- clay pots/pans, wood, or metal tools (doesn't matter if it's cheap) and a mortar and pestle. A master isn't a master because of his tools. It's his skill, talent, passion, and experience.

@@ilanf2 Expensive coffee makers are designed to work in conjunction with expensive grinders to use precise temperature and high pressure to extract flavour compounds from finely ground precisely roasted coffee. Cheap coffee machines are designed to produce an acceptable beverage from a dark roast, commodity, possibly pre-ground and packaged, low(er) quality coffee. You will probably get muted, non-offensive results from either good coffee or bad coffee in a bad machine. But if you put bad coffee in a good machine, it will do it's job and pick up every flavour compound from the bad coffee... even the ones you don't want. You'll end up with sour, burnt tasting coffee.

My parents recently re-did their kitchen and got an induction hob (4-burner). It's brilliant! It heats the pans up super quick and you have so much control over the heat levels. The super fast setting boils a pan of water in about 30 seconds (I found that out the hard way). And what's best is that if a pan boils over of splatters on the hob top, because the surface isn't hot the liquid doesn't burn on or get boiled a second time around (like my old electric hob used to do, harumph). As you say the only issue is with lifting the pan to stir of sauté, etc - there's no heat once you take it off the hob, but it soon catches up once you replace the pan. It's not so bad with the wok but you don't get the heat up the side as with a gas hob, so it falls down a bit there. But my parents aren't gourmet chefs so they don't really notice a difference. All in all I'm pretty impressed with their induction hob :)
