I love having these mixes on the pantry shelf. I usually make them once a month.
Cornbread recipe without powdered milk or egg
c flour
1 c cornmeal
2/3 c sugar
1 TBLS baking powder
1 tsp salt
Put the above ingredients into the jar for the pantry shelf and add the next 3 ingredients when you are ready to make the cornbrea.
1 c milk
1/3 c oil
1 large egg
Preheat the oven to 400 degrees F
Whisk flour, cornmeal, sugar, baking powder, and salt together in a large bowl. Add milk, oil, and egg; whisk until well combined.
Pour batter into the muffin cups.
Bake in the preheated oven until a toothpick inserted into the center comes out clean, 10 to 15 minutes.

3 TBLS powdered milk
2 TBLS powdered eggs
Combine the above ingredients in a quart jar
When ready to make cornbread muffins
Preheat oven to 400 degrees
Empty the contents of the jar into a bowl, and whisk dry ingredients, then add the following into the bowl.
1c + 2 TBLS water
1/3 c oil
Whisk until well combined.
Pour batter into muffin cups
Bake in the preheated oven until a toothpick inserted into the center comes out clean, 10 to 15 minutes.
Country Gravy Mix:
1 Cup All Purpose Flour
1 Cup Instant Dry Milk Powder (2 cups for granular dry milk)
2 TBLS Cup Cornstarch or Arrowroot Powder
1/2 TBLS Ground Black Pepper
1/2 TBLS Salt
1 tsp Onion Powder
1 tsp garlic powder
Whisk all ingredients together and store in an airtight mason jar (or jar of your choice). This is good for at least 6 months.
Directions for making gravy
1. Melt 2 Tablespoons of fat in a saucepan. Some 'fat' options are butter, ghee, sausage fat, or bacon grease.
2. Add 3 Tablespoons Gravy Mix
3. Cook on medium-low heat for 3 minutes (making a roux)
4. Pour in 1 cup water
5. Whisk and cook until thickened
Taco seasoning mix
1 T chili powder
2 tsp cumin
1 tsp salt
1/4 tsp pepper
1 tsp paprika
3/4 tsp garlic powder
3/4 tsp onion powder
1/2 tsp oregano
3 T mix = 1 packet
