Golden Sweet Potato Balls
Ingredients:
200g sweet potato (peeled, sliced, steamed for 20 minutes until soft)
40g sugar
70g tapioca flour
Practice:
1. Steam the sweet potatoes until soft.
2. Add sugar and mix, then mash the sweet potatoes into puree.
3. Add tapioca flour and knead it into a dough (leave a little tapioca flour and don’t finish adding it until the dough forms a ball) 4. Shape into long strips, then divide into balls (approximately 6 grams)
5. Pour oil into the pot, turn on medium heat, put in a sweet potato ball to test, fry until it floats, you need to keep pressing and rotating, the ball will expand bigger and bigger
6. Then fry over low heat until golden brown and then take it out.
