Tell me why the oil blend. I use olive oil but haven’t tried avocado oil. What does it add to the cooking process?

Olive oil has a low smoke point and avocado has a higher smoke point. For me it’s a good balance.

With the noodles, instead of water use a bit of heavy cream and let that thicken a bit, would be like an alfredo. I'm with you on the asparagus, I love it. I'm also a fiend for Brussel sprouts

Hey, Matt! A nonsequitor question: Noted your grease gate is nice and “shiny”… how often do you clean it? What is your method? What happens if it’s still hot, and you can’t really pick it up and clean it before any grease gets baked on, so to speak? Thanks… and, I am absolutely gonna try to do the asparagus and the bow tie pasta!!!!
