Hi! Here are more than three things to do with honeysuckle flowers! This video was filmed mid-June so honeysuckle season is pretty much over right now; but if you happen to spot any try one or more of these recipes!

~Honeysuckle nectar~
-Pick the honeysuckle after the first leaves
-Pinch the flower low down and pull to remove the flower from the stem, but the stem still holds the stamen of the flower
-Pull the stamen almost all of the way out, so the nectar is revealed at the end of the stem
-Drink the nectar
~Tea - fresh flowers~
½ cup honeysuckle, 1 cup water
Remove extra greenery - bits of vine or leaves
Set 1 cup of water to boil
Rinse the honeysuckle flowers
Put the honeysuckle in a heatproof bowl and pour boiling water over the flowers
Let sit 30 minutes to 4 hours (depending on how strong you want it)
Strain out the flowers (or not) and add any extras like mint or lemon balm
If it is bitter (the tea) add a bit of honey
~Tea - dried flowers~
1 - 1 ½ tablespoons of dried honeysuckle per tea bag (when you use it), you can dry as much as you want
Pick honeysuckle and hang to dry or put in a dehydrator or leave out on a piece of paper
Once completely dry store in an airtight jar
When ready to have the tea, either grind into small pieces to put in tea holder or leave as is
Pour hot water in the container with the tea holder and let steep for a few minutes
~Syrup~
½ cup sugar, ½ cup water, 25 honeysuckle
Combine all of the ingredients in a small pot on a stove
Medium to high heat, bring to a simmer and constantly stir
Reduce heat, simmer 5-10 min as sugar dissolves
Remove from heat and allow to cool completely
Strain out flowers
Store up to a month
Add to tea, cakes, bread, pancakes, yogurt . . . and whatever you like!
