All of those tomato scraps can also be dehydrated separately and then ground into tomato powder and that includes the stem area. That tomato powder can be used to make ketchup, tomato paste, can be added into soups, or paired with bouillon to make Spanish rice.

I just made your tomato sauce with olive oil and garlic. At the end I added basil. Your way is so much better and tasty! I feel browning the garlic first before adding the tomatoes is the trick. Once it cools down the garlic comes through but not over bearing. BTW I love garlic so I put extra in! I will not be canning tomato sauce, but doing it your way. I am also dehydrating tomatoes now. First time for dehydrating tomatoes. They should be ready tomorrow evening. Thank you for the tips! 😋🍅

I usually freeze my tomatoes whole. Before I put them in the bags I scoop the stem area out and when I take a bag out of the freezer I place them in a big bowl of cold water and the Skins slide right off. I don't like a lot of skins in my tomato sauce so this is the way I do it. The whole tomatoes then go into a big pot and I cook it the old-fashioned way.... all day. Couple of bay leaves, basil, oregano and of course garlic which I usually Brown slightly in olive oil before I put the tomatoes in the pot. And you're right Jag. They do last the year. My freezer usually doesn't get opened very often because I stock it with things like this so the tomatoes actually last longer than a year. I usually still have some leftover by the time the new season starts.

Love this and wish I had got a bit bigger freezer now🙄. Maybe I will have to slip skins/core and chop to make better use of space. And maybe just do the sauce right away. However, the skins slip right off defrosted tomatoes. I just don’t feel like canning this year. I’ve frozen whole tomatoes before and they do take up space. If the rest of the heirlooms are as cat faced as the first I guess they all will be chopped. Like you, I don’t like those skins and the only way is to remove or purée them.

@@dustyflats3832 I have an extra refrigerator in my basement so of course I use that freezer as well. Removed the shelves and I stack things as flat as possible so you can get more stuff inside of it. I done bought a small freezer with shelves and because everything is flat I just slide stuff right in. The tomatoes usually don't even take up that much space but I'm not so big on canning because it takes so much time. The thing I love about freezing the tomatoes it's a simple fact you don't have to blanch them like some other vegetables. It's so easy the way I do it. I stopped freezing cooked Foods because my family won't eat it. Now I just freeze as many vegetables as I can. The only thing I ever blanch I think are string beans. I don't have good luck growing broccoli but I would imagine you should blanch that for a minute to bring out the nice green color. Actually anything that's green should be blanched otherwise the color changes on it. I have found though that broccoli rabe is fine either way. Spinach can be Frozen without blanching as well. Anyway happy gardening everybody. I'm pushing 70 and have had several health problems over the last three years or so this is a form of therapy for me. I miss those days when I did more work outside and grew many many more things. I suppose because of the heat of Summer I'm going to end up being more of an Autumn Gardner. This summer was brutal and we had a whole month of temperatures over 85 degrees so that's when a lot of the tomato plants got stunted. Everything else seems to be doing okay but now we're in August and I'm getting my fall plants ready. It's really funny but every year I do things different according to the weather. There is really no set rule because if it gets too hot or too cold the plants do their own thing. One year I have tons of cucumbers and the next year hardly any. You just never know but I plant anyway. An example is how everyone talks about easy it is to grow zucchini. I always had so many zucchinis over the years and last year I ended up with one zucchini off of 10 plants. LOL. You just never know but one thing is for sure, make sure you have those pollinators out there. Do everything you can to attract them. I love the bees. They could be swarming and I'll walk right into them. I talk to them. I've never been stung. Oh and if you want to try something fun to grow...try loofah. I had more bees than ever. Thank you for this! I have a lot of tomatoes coming in and already have a pantry full of canned tomatoes. I found an Easy recipe for oil packed tomatoes on The Elliot Homestead channel a while back and already have several jars in my fridge. I also dehydrate tomatoes every year and add spicy salt to them as they are going into the dehydrator. It's So lovely all winter long to have spicy, crispy tomatoes to munch on. Looking forward to trying the tomato recipe you shared! Thanks again!

I recently found your channel and I absolutely love it. I am fortunate enough to rent from friends and have a very large yard and they don't care how much I plant in it - annual veggies or permanent shrubs and trees including fruiting ones. Your videos are so informative and valuable to me and I really appreciate how you will explain things, rather than simply say "this is what to do next". On a side note, I have been reading reviews for dehydrators this month preparing to buy one (or two) and I decided on the very same brand in this video - I was so excited to see that's what you use and it sure helped me finalize my choice!

I have but one complaint about the tomato garlic sauce; HOW IN THE WORLD IS THIS SUPPOSE TO LAST 6 MONTHS!?! It’s waaaaaaaay too good!!! Thank you for this recipe! So easy too! This will now be my main go to for the our tomato harvest. We just found out my Husband has to limit how many tomatoes he eats which means….more for me! I’m sad for him but very thankful for this recipe! Great video and thank you again!

Glad you noticed that! I stopped spending money on toys, the toys are just rubber and plastic etc. The dog plays with pumpkins, sticks of sugarcane and loves it! :) She chews and eventually eats the pumpkins too haha

One of the best ways to remove air from the ziploc bag is to use a large pot of water or sink and submerge the bag up to the top and close it. The water pressure will squeeze out all the air.

Definitely going to try the garlic tomatoes 🍅 and if I have enough give the dehydrated method a try. My dehydrator does not have temp control or a timer. Very old school. I think I’ve had it about 20 yrs. maybe time for a new one. Thanks again Jag for another great video.

You can make a powder out of the dried tomatoes and use it to sprinkle on popcorn or as a flavoring it is really delicious .

I have close to a bushel of tomatoes and another bushel of Cherry Tomatoes, the yellow variety. I'm going to try the freezing method. I usually can but just don't have the time or space this year. Thank you for the tips.

I probably use WAY more garlic than you do but I made my tomato garlic condiment with a lot of olive oil as well and I add some chili flake and a little bit of salt. Add a tablespoon of that to stir-fried green beans or zucchini and its instant umami. The flavor is so intense when you fry those tomatoes. Even though my tomatoes are almost done producing I will continue to do this with the grocery store organic tomatoes because they don't have much flavor anyway.

It’s great that people are going back to the old ways and I think this is going to be increasing much more with the prices increasing which is actually a good thing a blessing in disguise, including me but many people I know I’ve been eating too much fast food and specially in the past 56 years it has increased in the cost or just not worth it my husband and I went to a wonderful Mexican restaurant for a date night and we had a delicious prepared meal we actually Spent about the same as we would going through a drive-through just think about that anyways we are moving to autumn here in the Midwest of Minnesota Minneapolis area and the leaves are changing colors yellow and red and it’s time to prepare for the cold weather season we’re getting 40°F at night

The garlic tomato sauce looks so delicious. I will definitely try it. Just one question; the olive oil to tomato ratio is 1:2. How do you measure oil and tomatoes.

I used about 1/3-1/2 cup of olive oil and used a huge bowl of tomatoes. Definitely not a 2:1 ratio.

I got the Cosori after seeing this video. Do you still have to run it for 30 hours if you don’t have it as full? Like there’s not as much to dehydrate so I thought maybe it would work faster? I just did a test batch and probably 14 hrs in they look pretty done!

It's due to too much watering. Overwatering splits the tomatoes

@@DaisyCreekFarms Ohhhh ok. Yep, my tomatoes were picture perfect up until recently, but Im from NE MD, and we got hit with hurricane Ida that destroyed NY, and much more rain than mid summer. A few of my beefsteak tomatoes split down the whole side, but luckily they still finished turning red. Thanks! 😀 👍 🍅

I think I’ve done something wrong because it seems that the oil has separated but it’s not cooking down and sauce-like. I did 2 cups olive oil and 4 cups cup tomatoes. It’s been about an hour, so do I just need to be patient or keep cooking.

Be patient and keep cooking and stirring, don't let it stick to the pan, you tomatoes might have high water content.

Probably people who would think that 30 hours on dehydration device is a waste of money (electricity) and energy (pollution).

I prefer not to cook them with the seeds, but the seeds can be saved, dried and used to grow more tomatoes. Seems to me like a wasted opportunity not to use seeds. And you can still make salsa, sauce, paste, etc. It just seems to me that the tomatoes would dry more effectively if the wet stuff was removed. And you could then powder them which seems to becoming popular among people who dehydrate food. Otherwise I liked the video and think tomatoes are a must have crop just like potatoes, onions and garlic.
