Dry aging, salt curing/preserving, honey/sugar preserving and storing, pickling; these are all methods of food preservation and preparation that have been used, enhanced, and perfected upon for thousands of years. You would be fine, and most likely eat things that have been aged that you don't even know about. There have been jars of honey that have been found in ancient tombs that were tested and still perfectly safe to eat.
