I've made so many rib roasts in my life and have gone over 5-10 degrees way more than once. It happens, but if you let it rest long enough (as you did) it's still phenomenal. I've seen people royaly screw this up, and you did a great job with all of it!

Proud of you for eating healthy and good. Us Italians make prime bone in rib roasts every holiday. I especially make it several times a year. Put vegetables in the roasting tray and let the vegetables soak up the tallow. Please keep the roast into ribeyes. Don't cut into roast beef. For Christmas I had that with carrots, lobster tails, green beans and crab legs. Made a short if you want to see

Yes, it does make sense to dry it out before putting on the compound butter. The water on the surface would heat up and "wash" a good amount of your seasonings off as well as push the browning farther back in the cook cycle leading to possible overcooking. I'm not about the horseradish but to each their own.

I made the same thing yesterday for Christmas, my uncle Sonny used to make it growing up on Christmas and I wanted to start this Christmas making it every Christmas and it came out bomb. Next year I'll try to cover it in Mayo so I can get that good bark

YES. Cut the bones off in one slab. Season all over the bone slab and meat. THEN tie back the bones with twine, this both cuts the cooking time AND seasons more of the meat. Also you get fuckin beef rib rack to gnaw on.

If you want a more even pinkness, drop the oven tip a bit and allow it to cook slower. Pulling it out at 120 is the right move, it just want even throughout because the outer meat was cooking too much faster than the rest. I usually cook mine at 200 degrees and they turn out fantastic

yes, the dry brine helps the initial seasonings to get to the middle of the rib roast. But roasted garlic/pre minced any day of the week

Please share at what temperature your oven was pre-heated to before you put the roast in it. My thought is that taking it out at 120F isn't so bad, if you're cooking at a very low (below 300F) temp to begin with.

A quality piece of beef is hard to mess up even if you go a bit over, I prefer to pull at 120 and let it come up to 125 then hang out for 15 or so minutes. Then add my butter or bast it in it’s own fat Crank dat oven too max and blast it for a few minutes to get a crust.

Always cook bone in never remove it before hand, I’d have personally left the compound butter out and used it for some roasted veg in order to crisp up whatever fat you had on the lamb for both taste and texture.otherwise timing aside great job

Prime rib in my area is 18.99 a lb and most places do a 2 or three rib prime rib on holidays it's cheaper , but a 6 or 7 bone could easily get up there in price range.
