Cleaning griddles is one of the toughest jobs in a commercial kitchen. It is time consuming and can be hazardous, with associated risks of burns from the hot surface, skin irritation from aggressive chemicals and discomfort from strong fumes. The 3M Quick Clean Griddle Cleaning System for flat griddles offers an effective, safe and easy-to-use alternative

It's a simple alkali solution to dissolve the grease. Potassium carbonate and sodium carbonate with a thickener to keep it from running off. It will get aerosolized if you boil it, and that can irritate your eyes, nose and lungs. Lower the heat; anything above boiling is pointless anyway.

As someone who worked in a restaurant for 10 years and had to clean a griddle like this every night, I can tell you an easy way to clean one. Get a bucket of ice, carbonated water, a steel wool pad and a griddle scraper. In like 5 minutes you can get your griddle looking as good as this one, and save a whole lot of money.
@pascal590

@richdelgado3405

While the flat top is still pretty warm, throw about a half gallon of the ice/club soda water on the flat top and, using your scraper, start scouring the flat top with the steel wool, holding it down with the scraper. Continue doing this with fresh ice and club soda and that flat top will shine! And no chemicals or fumes!

Back in 1962 my dad Sank his life-savings into a hamburger joint with a franchise, he even mortgaged our house. After school I couldn’t wait to go in and work! I would rather do that than anything in the world I even told my dad I don’t care if I never get paid but my life will be working in a hamburger joint because it’s so much fun. We had to grill because we were totally slammed all the time and the grease would build up on the grill And it would turn black. My dad used to buy the big blocks of what looked to be volcanic rock, that’s what we used to scrub the grill. But first I would dump a cup of ice on the grill after it got super hot. And then when it got about halfway another cup of water and I would start scrubbing with that block up and down up and down back-and-forth and it did wonders. The name of the restaurant was McDonald’s and one day when I was at school the regional manager for North Florida came in and found those blocks. He reminded my father that everything inside that store had to come from McDonald’s supply and nothing else! Even the napkins, Paper bags, everything had to be ordered from McDonald’s. And my dad kept using them anyway until they ran out. McDonald’s was a brand new idea back then and we were one of only 8 if I remember. I still have some of the original opening day handouts. $.59 would get you a hamburger small order of fries and a small soda. This was suicide because some people would wait for up to two hours to get to the window and order , and my dad would not let me work ! I had to stay out of the way . After the first month the price went to $.99 with that you had the choice of a hamburger or a cheeseburger, small fry and either a small Coke or a shake. No tax back then. It got to the point where the grill would not be cleaned all day because he had orders to keep it loaded at all time! That meant as soon as you pulled off the cooked patty’s you dropped another full load. We had a great time but my father got really sick from all the stress and their marriage was really strained . He called Chicago and told whoever that he wanted to talk about selling his franchise. You had to do this through McDonald’s you were not able to sell it to anybody who wanted they would decide who was capable of buying. As it turned out McDonald’s purchased my dad’s restaurant and everything in it. That way he made a good profit to retire and got 2 1/2 cents for every hamburger 🍔 for 5 years. That location is still in Fort Walton Beach Florida at the very same spot. However it has been knocked down and rebuilt twice and I understand even though it’s one of the biggest stores they have it’s going to be undergoing another expansion with Four drive through windows . A franchise fee back then was $45,000 today I understand it’s a couple of million and you have to have a personal net worth exceeding 5 million. But I still like to know how they get the grill cleaned because these volcanic bricks did a hell of a job. At the end you had to wipe down the grill with a clean cloth slightly damp so it would pick up all of the residue from the volcanic brick 🧱.

This might very well be the most effective ad on the whole of KZfaq. Not only did I voluntarily watch this, I was (at least slightly) slightly entertained, and I actually went to their website to see how much this stuff costs. Couldn't find it though, maybe this is a regional thing, or they've discontinued it, but it didn't come up in searches on their US site. Kind of sad, I almost want to buy some, and I don't even OWN a griddle.

Every fast food place I worked at I did this every night when closing, although each franchise has their own branding they buy from 3M. I cleaned it every night I was working, but you could tell that nights I wasn't working: the grill wasn't being clean properly at some places. So it pretty much a gamble whether the employees are doing their job correctly.
