Senchado method is a great way to control temp as well. Pouring water into cups, then from cup to tea pot drops the temp many degrees and is so elegant to get the exact amount of water needed per cup/person. Thank for you content and sharing ideas & knowledge!

I've used the rule of thumb that pouring boiling water into another vessel can drop temperatures by 10°C. When I started exploring green teas without a variable kettle, this helped immensely!

Shade grown Japanese green teas are definitely some of my favorites. The intensity of umami gets me every time.

I feel as if all the teas I have just taste like water , I use 2 bags and the right temp , and even honey but nothing makes it taste well

Quality could definitely be a factor there. Flavors teas are also tricky because the small is usually much more intense than the taste.

How long should u brew peppermint tea for a not bitter taste?

If it's just peppermint on its own, I'll usually brew it with fully boiling water for about 5 minutes.You can experiment with reducing the steep time if you're still finding it bitter. Also watch how much peppermint you're using. 1-2 teaspoons per cup is plenty.
