No joke, I just made packet ramen and added all sorts of extras to get it fancied up. We added green onion, egg, and a Korean style pork cooked and marinated leftovers. They (my boys) ate it better than meals that I’ve made from scratch. Love these ideas!

A good bowl of ramen is one of my favorite dishes. I'm going to make the marinated eggs tonight! Also I currently have mackerel filets in the smoker as I type this. Something that couldn't be done without viewing your instructional video on how to filet a mackerel. One of my favorite KZfaq cooks!

Tonkotsu is all I've been able to get in my area of the US. For the corn topping I highly recommend adding smoked paprika, salt and pepper and getting a very slight caramelization on it. It is terrific on bean bowls and I bet it translates well to Ramen!

Thank you. Your videos are so helpful! Miso is also a favourite in our house. One question about the eggs. How long can they stay in the bag in the fridge? Can you make a larger portion and use them over a week?

Depending on the salt content of the marinade/brine, the yolk starts to get cured. At about 1 day you have a runny yolk, but by the end of 3 days you'll have a cured yolk with a more gelatinous texture. After about a week, the egg starts to pickle and take on a little funk (not in a bad way, just different). I would plan the batch based on your preferred texture and strength of flavour; if you like a 1 to 3 day egg, rotate a new batch of 3 eggs into the bottom of the bag every 3 days. Just remember to taste the marinade every time and adjust the seasoning, because the eggs exchange their water content for the marinade (osmosis), thereby diluting it. Cheers!

You could freeze it, defrost it when you want to use it but boil it (and cool down) before using again. Because it contains water, it will go off very quickly.

Thought about making a tsukemen video (where the broth is super thiccc)? Pretty much all of the English speaking recipes seems to make pretty thin broths for dipping instead of the almost gravy-like broths that require soup-wari in order to drink in the broth. Ignoring the whole talk about long (60+) cook times, I've also seen talk about using thickeners like potato starch. A video featuring heavy, thick noodles and how to make a proper, very thick tsukemen broth would be a warm welcome.

Miso is probably one of my favorites. When I'm being lazy I throw together some quick chicken broth with miso, toss in some rice noodles, veg and an egg and you've got a quick, healthy meal.
