My childhood right here lol. Daddy had 5 acers and he planted every inch of it. He had a green thumb like no one I've ever known. Mother canned, blanched, bagged, froze etc all of it. She made everything including our jams, ketchup, and pickles..... us kids were the helpers/guinea pigs lol. Experts st weeding and taste testing new recipes....

Please show the additional equipment for pressure canning since that will be the way most things need to be processed. Pickles, tomatoes and jams are great, but a lot of us want to can other veggies and meats, too. Thanks.

Pro tip if you can't find a rack... I just boil my jars with a kitchen towel under them. It works.

Can you tell me what you mean by “a towel under them”? Because I just canned a few tomatoes & don’t have a rack so I just put them directly into the pot and I mean they sealed but I keep hearing you can’t have them touch the bottom and I’m not sure if that’s just because they won’t stand up straight (they did) or if it degrades the efficacy of the seal. Would love a response.

@@stephaniemarie3587 It's more to make sure the glass doesn't overheat at the bottom and crack. I just put a simple kitchen towel (fabric one, not paper) in the water and put them on it, that way they also don't rattle.

Great vid! One thing that may have been as little confusing is that you only need new lids, the rings are reusable like the jars. If you don't have a rack you can use a washcloth, tea towel, hot pad, silicone mat, trivet; anything really. The issue is not not let water get trapped under the jars and then boil away, it'll break your jars.

My great grandmother sorta did this method. I don't use a pot to sterilize... Just wash in SUPER hot water. Make sure everything is clean clean. Also after filling the jars... Put the lid on and flip upside down, causing the suction to seal the jar tight!

Oh yeah, when I make elderflower syrup i pour while it's hot into hot jars and flip it, it works almost all the time but sometimes I had to try again

Lmao in my family, since forever, everyone just uses regular jars, just wash and disinfect them with boiling water before canning, you can just use some cloth like a kitchen towel instead of a rack. A hack for closing jars with jam and stuff like that from my grandma: put the jam in, put about a spoon of 95% alcohol and light it on fire let it burn for a bit but put the lid on while it's burning, then let it sit undisturbed for a few hours (they should make a popping sound) and check the lids before storing them safely for years.

Remember everyone, this is WATER BATH canning, which is HIGH ACID foods, fruits and such. Granted the U.S. (I've heard) only uses pressure CANNERS , but for low acid food, ie, veggies and proteins, you really should use a pressure canner. The U.S. has done extensive testing as to why. The way food has changed in the last 50 years, it changes what grandma used to do. (GMO foods, hybrids, extra-tomatoes are a biggie)

I canned tomatoes and the lids were leaking. I lost 4 large jars. How long do you put them in water for? Do you have to put the lids under the water? I'm so disappointed ☹️ hours waisted and might not do it next year.

I was worried at first too, but if the top of the jar seals properly (aka doesn't pop back up if you push down on it), then you've done it right!

Look for your local Master Food Preservers. They are trained experts who teach classes to the public on food preservation like canning, drying, pickling, freezing, etc. Usually free or $5-$10 per class. Great way to overcome fear, confusion, and misinformation on food preservation.

In my opinion, please do a video on overhauling the Legion and/or NCR. I recommend Arizona Slave Army as it seems more lore-accurate, but Caeser's New Regime is also pretty popular. There's a few NCR ones out there, too and even some mods that makr them skirmish and also patrol their respective territories.

Twenty years canning and always have jars directly contacting the pots bottom and with no rack. Never had a break. Save money by buying a thermometer and inside that your "kennel" isn't so hot it could break the cans. Thermometers are cheaper than racks

You don't need to buy fancy jars... You can reuse jars you get from the store with food in them. And all you do is clean them, then place in a dish with water into the oven. Put your food you want to can into the hot jar from the oven. Lids should be hot also. Put the food in screw up and tip upside down. It with suction the top and then done... Keeps just as long as all this none needed fancy stuff.
