Jessica, I would love to help you conquer your aversion to all things onion. My family loves the taste of onion but they don’t want to bite into an onion. I purée my onions in the food processor. After that I freeze the onion purée in ice cube trays. After completely frozen, I put the “onion cubes” in a ziploc bag. When a recipe calls for diced onion, I throw in an equivalent amount of onion cubes. They defrost incredibly quickly and they disappear into the recipe, leaving only the flavor. Please try it.

Great idea. What is one ice cube equivalent to? Since its pureed I imagine the equivalent would be smaller than a diced amount or do you still go one for one meaning if recipe requires a 1/4 c diced onions you do 1/4 c puree onion.

I learned to make my own red enchilada sauce from Rachel cooks with love. Also pablano sauce, tomatillo sauce. All of these are used to make enchiladas.

Another great video…just a mention that you could make the Oreo cookie with the mint Oreos and use peppermint extra to make another version of them… I have a similar enchilada recipe with an added addition of refried beans spread onto the tortilla and then the meat mixture.

Shallots are a good sub for onions. My daughter doesn't mind the taste of onion but hates the texture so I chop the shallot small and it does disappear. If you are gonna make bread a kitchen aide is a must. Best thing I ever bought! On sale at Costco this month for a big one which I love for doubling cookie recipes,( think oreo cookies you just made) . You guys are the best couple ! So fun ! Thank you!

I just finished making the Oreo Cheesecake Cookies and they were amazing! To not need eggs when you have to take out a second mortgage to buy them was great! I will be making these often because they were so easy as well! Because we are vegetarian, I am trying to figure out how to make your buffalo chicken sandwiches with a plant based product! We have just made the biffalow chicken sandwiches. My husband is a buffalo chicken and blue cheese lover so new this was a recipe for us. We can’t get the ranch dressing in our grocery shops here in Australia so I had to make my own version of that but other than that same same. We added lettuce and they were absolutely delicious and will be a regular in our household !!! And cheap too

Even though I have a big Kitchen Aid mixer, my Kitchen Aid hand mixer works great for cookies. An alternative purchase until they go on sale. These recipes look so good! My mouth was watering for the Buffalo Chicken.
