I love microwave recipes. My sister makes a peanut brittle in the microwave. Here’s the recipe: MICROWAVE PEANUT BRITTLE 1 CUP RAW PEANUTS (if using roasted peanuts, add after syrup is cooked) 1 CUP SUGAR ½ CUP WHITE CORN SYRUP 1 TEASPOON BUTTER 1/8 TEASPOON SALT 1 TEASPOON VANILLA 1 TEASPOON BAKING SODA STIR TOGETHER PEANUTS, SUGAR, SYRUP, AND SALT IN 1 ½ QUART GLASS DISH. MICROWAVE ON HIGH 7 TO 8 MINUTES, STIRRING WELL AFTER 4 MINUTES. ADD BUTTER AND VANILLA AND MICROWAVE 1 TO 2 MINUTES UNTIL PEANUTS ARE BROWN AND SYRUP VERY HOT. ADD BAKING SODA AND STIR. POUR ON TO PARCHMENT COVERED COOKIE SHEET AND COOL. BREAK INTO PIECES. STORE IN AIRTIGHT CONTAINER.

My mom and I always made cookies similar to the thumbprint peppermint cookies. We called them Peanut Blossoms, they are just peanut butter cookies with a chocolate kiss on top.

Also, my daughter gave me your cookbook for Christmas! I love it. We are going to cook through it in 2024! Julie, I’m not exaggerating to you when I tell you that you have changed our family’s life. We ate out all of the time. I thought cooking had to be complicated. We saved hundreds if not thousands from August to December making your five dollar dinners. They feed my husband and I dinner and then usually there is enough left for lunch the next day. You are the best!
